I need 5 or 6 basic meals that are easy, nutritional, don't need fancy ingredients but are tasty. I want to simplify my meals....

I like bacon, chicken, veggies, potatoes, cheese, pasta.

I don't like curry or rice. Help🙏

Chicken, onion, peppers chopped in a baking tray, sprinkle on paprika, cayenne, garlic powder, thyme, bit of tomato purée and a splash of water. Bung in oven, serve in wraps with cheese and sour cream/natural yog

Fry chopped bacon until cooked, remove from pan, add chopped chicken and an onion to pan and cook for about 5 mins. Stir in a Boursin cheese and a splash of white wine/water, put bacon back in and cook for 10 mins on low. Serve with pasta

Chicken, chorizo, onion, peppers, garlic and new potatoes in a tray bake

Spaghetti carbonara. Cook pasta, cook bacon and I add mushrooms. Chuck all in saucepan with beaten egg (off heat) and spoon of pasta water. Stir and serve with black pepper and parmasen.

Tomato, pepper pasta bake - cook pasta for 6 minutes, fry off peppers and onions, add jar of pasta sauce to the pasta and veg, top with cheese and oven for 15 minutes. You can add any other veg you like.

Chicken fajita pasta!

Cook some pasta and cook chicken in a pan with half a pack of fajita seasoning. Set to one side. Cook down peppers / onions / garlic until soft. Pop the other half of the fajita seasoning in, add in a small pot of cream. Stir through, put the chicken back in and the pasta. Top with shredded cheese!

Tasty, pasta is always a winner and gets a good few veggies in.

I buy the big packs of pork loin steaks, pork chops or chicken breast/thighs. When I get the shopping home I separate the big trays into portion sizes in ziplock bags and put flavouring on them:

  • lime and coriander
  • balsamic and sun dried tomato
  • honey, soy sauce and ginger
  • bbq sauce
  • peri peri marinade
  • pesto
  • jerk seasoning rub

Whatever you like and have to hand

Then freeze them. They start to marinade as they freeze and continue as they defrost.

Night before, take them out of the freezer and into the fridge, then they'll be ready by dinner time.

Pour onto a baking tray and into the oven gas 6 for about 30 minutes, depending on cut/thickness/bones.

Sides I do something like corn on the cob, microwave rice, put broccoli and cauliflower on a tray with garlic and olive oil and roast at the same time as the meat, chips and beans, steamed in the microwave green beans/asparagus/sugarsnap peas finished with a knob of butter, salt and pepper.

And sausage bake, could work with chicken breasts, drumsticks or thighs too, but basically big roasting pan, meat, potato chopped into cubes/slices/wedges, onion sliced up, peppers, cherry tomatoes, olive oil, salt and pepper.

Then roast for about 40 minutes giving it all a good shake every now and then to make sure it gets crispy all over and the tomatoes bust open.

Fry a packet of bacon (chopped into bite-sized pieces) or a pack of bacon lardons until any 'wetness' dries out and you're just left with the bacon fat. As the bacon is frying, slice a punnet of brown mushrooms and then add them to the bacon (you might need a splash of oil). Cook for 4-5 minutes. Make a well in the middle of the bacon/mushroom mix and add a whole pack of garlic & herb Boursin or Roule cheese, along with about half a cup of water. Mix everything together until the cheese is incorporated. Season with salt & pepper and serve over rice/mix through pasta/stuff into a baked potato. Super easy, quick, and delicious!

Pack the peppers with sausagemeat, put the 'lids' back on the peppers, put them in a dish and cook for 30 mins. If you're feeling up to it, mix some chopped parsley into sausagemeat.

Then put a chilled garlic bread baton in, and leave them in oven for another 15 minutes.

Sweet peppers, herby sausagemeat, garlicky bread. Serves two. Takes about 5 mins prep time. Delicious 😊

Chop a big onion into the bottom of a baking dish. Use mini fillets or cut chicken breasts into three and lay out in a later on top. Cover the chicken with bacon. Bake for around 40 minutes or until the bacon is starting to sizzle.

In a pan roughly chop up mushroom and fry for 2 minutes in butter with 2 squashed garlic cloves. Add 300-400ml cream. Add lots of pepper to taste. Bring to a simmer.

Pour over the chicken and return to the oven for another 40-50 minutes or until sauce thickens to gravy consistency. You can add cheese to the top if wanted for the last 10 minutes.

This is great with peas and rice or mash. Or shred it as a meaty pasta sauce. A real crowd pleaser. Probably got the most compliments from this dish alone and I consider myself a decent cook.

Chicken and bacon pasta in a cheese sauce.

Cook pasta. Drain, rinse in cold water to stop it cooking more, set to one side.

Cut up chicken and bacon into small pieces. First fry the bacon until crispy, then remove from pan, set to one side. Now cook chicken until cooked through and brown. You can add chopped onions now if you want (fry if added). Return bacon to same pan, heat through. Add some chopped garlic, cook a couple minutes medium heat.

Add knob of butter until melted. Mix. Now sprinkle in flour, about two table spoons worth, mix until everything is coated. Now add some milk, little bit at a time, keep mixing and cooking (medium heat so it doesn't burn the milk). Flour changes and thickens when heated, so add until you get a sauce consistency you like.

Add a (ton) of grated cheese and cook until melted. I am a cheese fiend, so I add loads, ha. Add salt and pepper to taste.

Try hello fresh or gusto - haven’t tried the latter btw. They do some really easy meals, which are graded by difficulty. You get all your ingredients in the correct weights with a printed card of step by step instructions. The easy ones involves minimal effort and adding sachets to flavour the food as you go along. They presume you have a very basic food cupboard with stuff like oil, salt, pepper and sugar.

Hunters chicken: wrap chicken breast in bacon, bake for 30 mins on 200oC , then pour over BBQ sauce and top with grated cheese. Back in the oven until sauce is bubbling and cheese is melted. You could always serve with a baked potato that has been zapped in the microwave to start it cooking, then finish it in the oven with the chicken.

Tray bakes are my favourite easy meal with minimal effort.

Chicken, new potatoes, peppers, onion, Mediterranean herbs and feta - just bung it all in and tastes amazing!

If you like fish try salmon with honey and soya sauce.

Or try baking feta and tomatoes, then stir over cooked pasta - heaven!

Stir fry’s are nice and quick too with meat, veg, noodles and sauce.

For a slow cooker, Chop up some veg in the morning (maybe red peppers, an aubergine, a bit of sweet potato, but basically any combo of veg works), and add a tin of chopped tomatoes, a tin of beans (butter beans or chickpeas work well), add some herbs, a stock cube and some salt & pepper). Put on low setting (for all day) or a high setting (for half a day) and you'll come back to a nice and healthy veg casserole. Serve with a baked potato, which you can bung in the microwave if you're not bothered about it being crispy. If you're unsure about your slow cooker practice when you're at home all day..
