I need 5 or 6 basic meals that are easy, nutritional, don't need fancy ingredients but are tasty. I want to simplify my meals....

I like bacon, chicken, veggies, potatoes, cheese, pasta.

I don't like curry or rice. Help🙏

Jamie Oliver's Greek pie. Absolutely delish!!!

Eggs
Green pesto
Chicken
Feta cheese
Spinach
Filo pastry

Line the tray asif your making a pie with the filo pastry, leave some hanging over the sides to fold over the top! dice an cook your chicken, add spinach until it welts then mix in an egg, half a jar of green pesto and then crumble the feta in, mix it all up and put it into the pie, fold the pastry over so it's all covered an cook in the oven until golden

ABSOLE EASY WINNER !!!!

Put oven on to heat up to 180
Fry onions and sliced chorizo on medium
Add sliced peppers and stir
after about 5 minutes add sliced chicken breast, paprika and smoked paprika.
stir again and leave for about ten minutes

Pour on a jar of chicken tonight Spanish Chicken (I know! Just give it a chance!)
Let it bubble then put in an oven dish and top with cheese.
Takes about 15 minutes in the oven which is long enough to make either rice, pasta or garlic bread.

we had it tonight with uncles bens Smokey bbq rice for an even easier side.

Creamy Chicken, bacon and leek pie.

Cook the bacon and chicken in a pan.

Add the leek and soften.

Add a bit of water some double cream and chicken stock. Season with S&P and any herbs of choice (I like tarragon).

Reduce to a thickish consistency and let cool a bit.

Take 2 pre rolled sheets of shortcrust or flaky pastry (your preference). Don't throw away the grease proof paper.

Lay one out and brush the edge with beaten egg. Tip the chicken filling in the middle, then slap the other pastry sheet on the top and crimp them together using a fork or a Cornish pasty type hand crimp.

Brush the top with more egg.

Whack in the oven for 30/35 mins @ 180 until golden.

Serve with mash/jackets and side veggies.

Tip: I often make double filling and freeze half. Ready made pastry can also be frozen.

Then I can just take out of the freezer the night before, assemble after work (takes 5 mins) and whack in the oven.

You can also cut the pastry into smaller rectangles to make individual pies if you want.

I buy the big packs of pork loin steaks, pork chops or chicken breast/thighs. When I get the shopping home I separate the big trays into portion sizes in ziplock bags and put flavouring on them:

  • lime and coriander
  • balsamic and sun dried tomato
  • honey, soy sauce and ginger
  • bbq sauce
  • peri peri marinade
  • pesto
  • jerk seasoning rub

Whatever you like and have to hand

Then freeze them. They start to marinade as they freeze and continue as they defrost.

Night before, take them out of the freezer and into the fridge, then they'll be ready by dinner time.

Pour onto a baking tray and into the oven gas 6 for about 30 minutes, depending on cut/thickness/bones.

Sides I do something like corn on the cob, microwave rice, put broccoli and cauliflower on a tray with garlic and olive oil and roast at the same time as the meat, chips and beans, steamed in the microwave green beans/asparagus/sugarsnap peas finished with a knob of butter, salt and pepper.

This is fantastic! I’m going to do this.

Tarragon chicken-brown breasts, then add glass white wine, reduce, add chicken stock and simmer for 15 minutes. If you like mustard add a bit of Dijon. Add chopped tarragon to taste(use sparingly at first). Schwarz do the best dried tarragon. Finish off by adding c30ml double cream and heat to simmer. Serve with sweet potato mash and steamed cavalo nero.

Pressed Mediterranean Loaf (brilliant ‘no cook’ make ahead meal)

Roast a big bunch of Mediterranean veg and let it cool (The frozen stuff in a bag is fine if you can’t be bothered with fresh)

Get a large cob/round loaf of bread

Cut off a ‘lid’ from the loaf and tear out the middle of the bread so you have a bread shell (you can use the torn out bits for bread pudding, breadcrumbs etc)

paint the inside of the loaf generously with green pesto

fill up the loaf with layers of the roasted veg with Parma ham and sliced or torn mozzarella. Press the layers as you go and really fill it generously

wrap in grease proof paper (or put in a big freezer bag) and put a weight on it (some cans of beans on an oven tray work well) and leave in the fridge overnight

The next day : Warm in the oven for 30 minutes the next day if you want a gooey cheesy melt or just eat cold

this is great for a picnic too!

With slow fried onions and peas, plus lardons for the non veggies. Use lots of black pepper on the cauliflower and roast until it's 'just' burning. Easy, filling and delicious.

I can cook, but I have zero interest in it so my dh does it all.

If he’s away, I have a small but tried and tested list of family favourites.

I will cook lasagne, spag bol, spag carbonara, sweet & sour chicken, baked salmon and baked veg, baked haddock with lentils, frittata with loads of veg in, soups - broccoli and Stilton or French onion, meatloaf, chicken in cream and mushrooms with green veg, or grains (those pouches you can buy) with goat’s cheese and sundried tomatoes mixed through.

All of these things are really quick and fairly healthy.

Tin of tomato soup
Cup of orzo
Couple of handfuls of frozen veg

Put soup in saucepan
Fill tin with water and add to saucepan
Add the orzo and veg
Simmer gently for 20 mins

Chicken breasts covered in bacon, grated cheese - bake in oven until juices run clear. Serve with pasta - use the pan juices too.

Lemon chicken - saute chopped garlic for a minute on pan, add cut up raw chicken breast, saute a few mins until no longer pink anywhere, add S&P, add half a cup of chicken broth and half a cup of lemon juice (bottled is fine), add dried mixed herbs/ herbs of choice, bring to a boil then simmer for about 10-15 mins. Meanwhile cook pasta. Toss chicken and pasta plus lemon sauce together with parmesan cheese. Nice with broccoli or asparagus thrown in too.

Top boneless, skinless chicken breasts with a big dollop of mixed Hellman's mayo, parmesan cheese, black pepper, and a drop or two of Tabasco or a teaspoon of Grey Poupon style mustard. Bake in medium oven until juices run clear. Serve with orzo or any other pasta - use the pan juices too.

The viral Boursin pasta dish - slice up 20 or so cherry tomatoes (I prefer san marzano or piccolo) add to a oven dish, place a whole round Boursin in the middle. Generous glug of olive oil, oregano S&P, garlic (I use a couple of teaspoons of minced garlic from a jar) pinch of red pepper flakes and roast for 30 mins, smush it all up and add to cooked pasta with a cup of pasta water. Gorgeous.

Cheeseburger pasta

EQUIPMENT
Slow cooker
1 slow cooker liner - comes in a pack of 5 for about £1 - saves on washing up - I tuck it in under the rim of the slow cooker

500g cooked beef mince
1 onion chopped

DRY
1 tsp paprika
1 tsp mustard powder
1 tbsp dry parsley
320g of dry pasta

WET
1 tbsp tomato purée
1 tbsp garlic purée
1 tbsp Worcestershire sauce
900ml chicken stock (I use 2 stock cubes)

Salt and pepper
150g cheddar -
4 cheese slices

Gherkins chopped
Burger sauce

  1. Brown the mince and onion and add with all other ingredients including the dry pasta
  1. Cook on high for 1h 30m
  1. Top with cheese slices and gherkins
  2. Close the lid for 15 mins
  3. Top with fresh parsley and burger sauce and tuck in

I keep it very simple:

Salmon fillet (cooked in a parcel of tin foil so it steams) with jacket potato and lots of salad (plus a bit of light mayo) - salad is lettuce, red cabbage, carrot, sweetcorn and whatever else I want to chuck in (grate the red cabbage and carrot)
Chicken thighs in a honey marinade served with flatbread and lots of salad
Pesto pasta with broccoli and petit pois (boil these with the pasta), courgette and mushroom (slice and fry these in a little oil)
Roast dinner (just a roast chicken or gammon) with potatoes and as many types of veg possible (I buy pre-made cauliflower cheese and red cabbage as I'm lazy)

I tend to have the first 3 twice a week each then the roast on Sunday - makes the shopping less expensive too and I'm getting plenty of veg for dinners.

Haven't rtft so apologies if already suggested.

Chicken fajitas: slice chicken, onions, peppers (or whatever other veg you like) fry in a tablespoon of oil with a sprinkle of fajita spice and a squirt of garlic puree (from a tube). Put into tortilla wraps, sprinkle with cheese, roll up.

Chicken bacon potato bake. Chop up potatoes and boil for 5 mins. Drain. Chop chicken and bacon. Put in oven tray with potatoes. Stir in a spoonful of oil, salt and pepper, garlic paste. Bake for about 30 mins at 180.

Chop an onion into strips, fry in oil for 20 minutes low heat, stirring occasionally. Should be lovely and caramalised, add carrot chunky strips, red pepper, courgette (if you like courgette!) and frozen peas and continue to cook for 15 mins, add 2-3 tablespoons water, turn up the heat to medium and cook till most of the water has gone, then add sachet quinoa or quinoa with grains and a little more water and cook till the water has evaporated. Add salt and pepper and fresh chopped chives and parsley.

serve with whatever protein you like - I normally do something easy like halloumi or bung sausages in the oven
