Gas hob or Induction

I'm being a complete lazy cow and hoping to piggyback someone else's research here! In my head I have that induction is a more environmentally friendly/sustainable way of cooking, is it more expensive though what with the electricity??

We cook from scratch 6 out of 7 nights.

Will be looking at a modern range. Spoke to a really helpful in most ways chap at an independent place who does the brand we're looking at and he was pushing me toward gas....but I don't know if that was because he had one of those on order for stock due in in next week or so, so would have got all his money quicker (big wait time on orders from the manufacturer currently)

When dh wanted to swap from gas to induction I objected.
A week later I admitted he was right.

Induction, absolutely. I find it easier to control and much more efficient.
I can't say what difference it makes to the electric bill as we're an all electric house.

It is the definition of a wok that is causing the confusion.

If it has a "large flat base" is it a wok or a western style deep frying pan pretending to be a wok?

We use a pretend wok/deep frying pan for stir frying on our induction, a real wok and wok cooking techniques (the high heat achieved with a round bottom, tossing) are not really practical on induction but also not necessary for most home cooked stir fries.

This is my wok. It works perfectly on my induction hob. I had a tradional carbon steel one, but I have given it to DD.

Induction looks lovely but buy the best you can afford and read the reviews. Mine is shit !!! Like someone else says it beeps at me forno reason, turns itself off and won't turn back on. It's slow as well. But my friend has an amazing one !

It’s nit a choice between gas and induction. I have a flat ceramic. Easy to clean. Doesn’t need new pans. Perfect

Other than perhaps needing new pans (most of my pans worked on induction) induction far out performs ceramic.

In what way? Mine gets hot and cooks stuff. It’s quick and clean.

Induction is much more energy efficent than ceramic. It is exceptionally fast compared to gas which is also faster than most ceramic, induction will boil a pot of cold water quicker then a kettle. Ceramic heats the whole hob surface and you are more likely to get burnt on food. Induction heats the pan and you only get residual heat on the hob from under the pan meaning it cools down quicker and spills are much easier to clean, it also doesn't get hot unless there is a pan on it making it safer.

I've always had a gas cooker until we moved here and the was separate oven (e) and gas hob, but due to some design features we had to take the hob out and find something else. I found an induction hob which plugs into a 13amp socket. Brilliant!! Best thing I ever did. It cooks quickly, doesn't waste energy and is very easy to keep clean not at all like the gas hob. In fact I can't understand the people who say they don't like them.

Absolutely this. Apart from being equally easy to clean compared to a gas hob, and electric rings, induction is streets ahead of a ceramic hob. I grew up with ceramic hobs and preferred the gas hobs I had as a student, a renter and a home owner. Then I bought an electric induction range cooker. It's the bomb. You really can boil a huge pan of water quicker than it takes to boil the kettle. It is responsive and I hope I never have to go back to anything else.

energy efficient - probably, but it doesn’t affect my smart meter much when I have the hob on. I can see the safety aspect, but I live alone so not an issue for me. I can’t see how it could be easier to clean as a quick wipe cleans mine.
im not saying ceramic is better, just that for some people it is a good choice.

When say the whole hob surface - I mean the ring area and also heat dissipates into the surface area around it making it much less efficient than induction.

The only advantage of ceramic over induction is it can be cheaper initially to purchase and some pans won't work on induction. In use, induction is far superior.

If you want to test it out Ikea sell a portable single induction hob for £50. We bought a 2 "ring" portable induction hob from Amazon before our kitchen extension was done to try out an induction hob and with the intention to use it whilst our kitchen was being built. That decided the induction route for us.

We have had the induction hob 10 years. The main thing you need to be aware of is you cannot put a larger pan than the ring allows. Unlike gas it will not still heat up the whole pan. It will just heat up the middle of the pan but this is user error, not the fault of the hob.

Our hob allows you to combine zones so that the whole of one side will respond to a pan. There are more sophisticated ones that allow you to put a pan anywhere on it. Do some research into that. Our hob was not cheap, it was £850 and worth every penny for the ease of cleaning it alone.

A giant benefit to us was teaching the children to cook, not having to worry about them setting an oven glove on fire and having the back door wide open and the gas hob flame being blown out as it had done previously.

TLDR Induction.

This sums it up nicely. My still MiL has ceramic. It works, but going back to it from either induction or gas (I've had both over the years) is massively frustrating.

I've done Gas vs Induction in detail upthread so won't rehash here (basically: Induction wins, just, but with massive reservations and regrets), but didn't mention ceramic at the time for NoTouch's reasons above.

BTW I wish MN had upvotes; it would make these threads a lot shorter, in a good way!
