This would be hard but as a child The Lion the Witch and the Wardrobe, The Weirdstone of Brisingamen. the Cherrys books by Will Scott, The Children of Green Knowe and The Dark is Rising

Adult wise Great Expectations, LifeAfter Life and God in Ruins, and Perdito Street Station, The Scar and The Iron Council an amazing trilogy by China Mieville

Also loved "Daughter of the Empire".

I've also read everything by David Gemmel with my favourite being Legend. The audio book is particularly good

The Duncton wood trilogy, I feel like it has so much more depth to it than water ship down but unfortunately it isn’t nearly as well known.

The Philosopher's Pupil by Iris Murdoch.

I am also really fond of the Poldark books (up to The Angry Tide) and re-read them all every few years.
