Most eaten vegetable(s) in your house?

Given the news stories about the availability of vegetables, we have just had a discussion about which vegetables we'd struggle to give up.

Mushrooms. We are a family of mushroom lovers! Luckily, we can grow those at home all year round.

What about in your house?

Carrots. Ds eats them raw throughout the day so we go through loads of them.

Carrots. Eat all year round as veg and most days grated with some kind of salad.
Potatoes- couldn't live without.
Onions - easy to forgrt but go in most meals.
This time of year cabbage, leeks, kale.
Summer , beans of all kinds, lettuce, tomatoes etc.

Can't really limit it to one or two. The vegetables I almost always have in and use a lot as ingredients of stews, sauces etc and/or as a side vegetable/salad are onions, garlic, potatoes, celery, carrots. I buy some of these each week: peppers, mushrooms, broccoli, runner beans, cauliflower, spring onions, swede, parsnips, leeks, parsley, and often Brussels sprouts (winter months) or some type of cabbage. We usually have cherry tomatoes, cucumber and lettuce, but could manage perfectly well without those if we had to (but then I'm not the one who eats them mostly).

They're definitely the ones that would be most missed.

My 4yr old DD can chomp through a fair number of raw peppers in a week and I probably include them in about 40% of the meals I cook!

We get through alot of salad vegetables so are struggling ATM

We also eat a lot of carrots, green beans and babycorn every week

A whole range of maybe 10-15 staples off the top of my head, plus extras. We get them delivered, and top up from supermarkets if needed. If there were a green grocer nearby we'd top up from there. We're seriously considering getting an allotment to grow our own where possible.

I eat low carb so veg makes up a big part of my diet, I'd struggle to do without many of the things I eat but if I had to make do I certainly could, and would. Would obviously prefer not to have to do without though!

Apart from soup, I’m not sure how to incorporate root or seasonal veg into meals like lunches so that they are different to dinner? And I don’t want soup all the time or I’d get fed up, I already have it once or twice a week.

As a vegetable on its own, probably broccoli.

As an ingredient, peppers - in stir fry, fajitas, curry, chilli etc.

We grow lots in summer so no issues then but also not a problem at the moment we just vary what we eat

Roasted veg for salads?
Carrot is good grated in salads or use it with potatoes for mash

We eat loads of veg (veggie family) but the consensus was that life would be way worse without mushrooms.

We get through lots of onions, carrots, mange tout, sugarsnaps, peas, broccoli, spinach and kale too. And eat plenty of other veg too.

But we were discussing how sustainable it is to eat lots of this kind of veg in this country at this time of year. Isn't it the 'hungry gap' right now? Very little fresh stuff is grown here and available here at this time of year. We've got one crown prince squash left from the autumn harvest, and no onions. If we were going to try and be self sufficient, these would be the hardest months.

Cauliflower, cabbage, broccoli, mushrooms and spinach as they're low carb.
Husband's favourites are peas, carrots and swede

I suppose lettuce, celery and avocados are technically salad but I eat a lot of those as well.

A variety, but most veg has at least one person doesn't eat:
Carrots 4/5 eat, I suppose, so probably that.
