2 chicken breast in a curry for

3 adults. 1 teens. 1 child.

I've a 4 pack of chicken.

I need something for tea tomorrow so I've had to just cut up 2 breasts small and put extra veg in (peppers and onion)

Anyone else having to do shite like this

Got rice and naan though so we're all good.

Just baffles me how expensive meat is now

This is a joke . I’d use 3 chicken breast for 3 adults and a 1 year old . This can’t be a serious post ?

1 spud person. Diced.
1 Sweet potato. Diced
Half cauliflower, cut into florets.
Add to oiled pan and lightly fry.

Blend, large onion, 2 garlic cloves, curry powder 2 tsp. (Garam Masala, cumin powder, turmeric. Teaspoon of each if you have some).
Add blended paste to fried veg. Stir and cook for a few minutes, add tin of coconut milk, veg or chicken stock cube and sufficient water to cover veg.
Add in a few handfuls of lentils.
Simmer until veg and lentils soft.
Taste and add more curry powder, masala, salt pepper to suit before serving. (Chopped coriander-optional)

Surely it depends on the size of the chicken breast you are using? I know the ones I get aren't small!

Also depends on budget. Free range are almost £5 for two at Tesco.

Have a google of some veggie curry recipes, we only ever hav veg curries now, you don't miss the meat and they are loads cheaper.

We are definitely getting meat to go further ATM. Tbh, it isn't a bad thing and it's something I always mean to do, but then my good intentions go by the wayside.

DH and I made fajitas out of two pretty scrawny drumsticks today. I'd normally say two small drumsticks was a child's portion for dinner. Was it super delicious? No. But it filled us up and we added loads of veg and had the wraps etc, so it was fine.

I am not veggie obviously, but I will definitely be eating more veggie curries from now on. On the subject of fajitas^^, I did make cauliflower fajitas a while ago and they were actually really nice. So will suggest that to DH next time.

We don't buy chicken breasts at all anymore! They are really pricey.

I batch cook mild veg curries and freeze so that any curry can be bulked out with a couple of side dishes: makes it more like a feast and uses less meat. I currently have daal, a mild mixed veg curry and a mushroom saag in the freezer, all flat packed in bags so I can snap off as much as we need.

I don't use Brest for curries and stews but 2 ( presuming they weight 150-200g each) should be plenty in a mixed curry with rice and naan or chapati for 4.

Why is adding onions and peppers 'doing shite like this'?

I usually use loads of onion, ginger, garlic and tomatoes and/or peppers etc in a curry base any way. If you aren't putting veg in your base what are you using in your curry sauce to thicken it?

Dh won't eat anything with chick peas lentils or anything like that
So i do 4 'costco' fillets which are huge.
For 3 adults, 1 infant and 1 toddler. And freeze a portion for either 1 adult or the 2 dcs.
We are all big meat eaters. Yes its expensive. Yes i could do without the expense but we cook 1 meal for all and im not faffing doing different for each of us.
And i wont eat any meat that's touched the bone or has the ' greyer' color and nor will eldest.
I do look at ways to have meat free days though to balance it out

I eat meat rarely but I have to disagree. Meat absorbs the flavours of spices like veg never will

The 'shite like this' was referring to only using half the pack of chicken when I used to use the whole thing without a second thought.

And If you read the thread I said I ALWAYS use veg. I said I bulked it with EXTRA. So more than I usually put.

I always add onions, peppers, mushrooms to enhance a dish but they don’t replace the scrimp on meat, to be honest. I’ll sometimes do chickpea or button bean
curry but let’s not kid ourselves

I am not judging but trying to understand: what meat counts as touching a bone and which not? For example:
Chicken breast vs boneless thigh fillets? Do they both count as not having touched bone if they are bought off the bone?
Gammon steak vs a boneless ham?
Rump steak vs shin beef?
What are the deciding criteria?
I h as v we'd as friend with the same limits s as no end up cooking veggie for her as I don't understand the limits. Thanks

I wasn't trying to be contraversial.

I was just pointing out that my shopping has gone up about 35% I need to drag stuff out more and cut back so instead of a chicken heavy curry we had a less so one with more veg in. I was just pondering the fact that it's even necessary to think that way now. Everything seems so different.

I've always done this. I usually put diced butternut squash in too. Occasionally chickpeas but the kids aren't so keen.

Food just has to go further.

Using some meat keeps it familiar. Increased veg disguises the change. We do have some good veg curry recipes but Missing meat /luxury items out -altogether -ALL the time feels a bit miserable.

My mum was good at this mix and make-do cooking!

It is like returning to childhood (financially poor-and many siblings) or when first buying a house (mortgage rate rapidly increased)

Sounds good to me, op. Not sure why you’ve received so many annoying responses.

I turned one helping of chilli into three tonight with extra tomato, beans and spices. Don’t think anyone even noticed the low meat content.

A standard portion of chicken (cooked) is 90g (British Dietetic Association) . So if serving less, you may need another source of protein , unless you're served a higher protein dish earlier in the day. Or the day before?

It's the last couple of decades where chicken has been so cheap that people can eat large amounts of it without thinking that's 'different'. Also using chicken breast in a dish that should be made with portions from the whole chicken and only using chicken as the protein source, instead of serving the meat curry as part of a selection that also includes pulse based dishes and vegetable sides.

This should not be the norm and never was until recently. If people revert back to previous times where less meat was eaten, with more vegetables and pulses, it will be better for health, the environment and animal welfare.

I get it, it’s shit. Our food bills are astronomical just now, and everything is smaller and poorer quality. We don’t even eat that much meat - I was growing a lot of our fruit and veg the last few years but the rain last year wrecked everything I’d put in, so that was that. I hate the way we’re eating just now, it’s all tasteless fruit with huge air miles. And it costs a fortune.
