2 chicken breast in a curry for

3 adults. 1 teens. 1 child.

I've a 4 pack of chicken.

I need something for tea tomorrow so I've had to just cut up 2 breasts small and put extra veg in (peppers and onion)

Anyone else having to do shite like this

Got rice and naan though so we're all good.

Just baffles me how expensive meat is now

I never use more than 2 for 5 people. Lots of veg and carb to serve with. We find it enough.

I add tinned potatoes in and I leave the chicken for everyone else. It's stupid expensive, I agree.

I would only ever use 2 chicken breasts for our family of 2 adults 2 teens (although I'd prefer to use thighs). Nothing to do with economy, just that's the right amount once you've added the other ingredients in (for a curry it would be a selection of spinach/chick peas/onions/potato/cauli/tomatoes/onions etc depending on what needed using up and what type of curry I was making). Think chicken breasts are pretty large now - around 150 - 200g each, so that works out at about 75-100g per person, which is about right, no?

We're not skinny or undereaters, but one breast per person would be far too much in a curry unless we had nothing in the sauce but the diced chicken, which I don't think would be tasty or healthy.

I generally use 1 breast between me and 18yo DD in anything where it's chopped up. If I get a large one and want to cook it 'whole' I'll half it lengthways.

Am also going the full mythical chicken this week.

1 portion roast (1 leg quarter)
2 large burritos (remaining leg meat plus pickings after poaching the carcass)
2 portions Paella (1 breast)
2 portions curry (1 breast plus added chickpeas and spinach)

Chicken breast is expensive and dry. Chicken legs/thighs much cheaper and nicer.

I don’t think I’ve ever bought chicken breast, it’s always been ridiculously expensive! We’re practically meat free now due to cost of it all though.

One of the ways to help make chicken go a little further is to cook the breasts whole and then shred it using two forks, then add to the sauce you've made. I've started doing this and it makes it bulk out the meal more than just diced if that makes sense? X

Agree. It's a technique they use in Gousto recipes and make it seem like there's SO much chicken.

I agree meat is expensive but I wouldn’t say it’s ‘shite’ to pad out a meal with extra veg. It makes it a healthier option, surely?

Honestly I wouldn’t even notice it. For years I’ve regularly halved the meat (Delia is particularly bad for too much meat) and bulked out with more veg etc.
Flowers For that horrible anxiety when you have to economise going to bed early to save heating, missing events because you can’t afford them or having to deny children stuff, but reducing meat has benefits.

To be honest, I’d just make a vegetable curry and save the chicken for another day. I find you can’t really taste the chicken in a veg heavy curry so think it’s a waste to add it.

People saying they regularly use 2 chicken breasts between 5 people is ridiculous. But I'm sure I'll be told it's more than sufficient and I'm a big fat pig.

Meat should be expensive, it is very expensive to produce to high welfare standards.
We've just been completely spoiled in the last few decades with artificially low food prices and plenty of everything.

Use more potatoes and veg etc.

Most of us use thighs (because they are cheaper and tastier) and loads of veg (cheaper, tastier and healthier), many also add beans or lentils.

Did you really used to make curry without even adding onions?

Seems fine to me.

But also echoing everyone else - use thighs, or bulk out with chickpeas, veg, lentils - anything really. It will be better than a curry with just breast.

I haven't bought chicken breast for years because I'll only buy free range and it's SO expensive. Thighs are just as tasty, if not more so!

I always make 2 chicken breasts do 4 of us! Husband, me, DD 16 and DS10.

Nothing to do with the price of meat, I am trying to cut down on the amount of meat we eat generally for environmental reasons.

Chicken is expensive but I second adding lentils. You can get large bags of yellow lentils at most large supermarkets and they're really cost effective. Dhal reheat really well for lunches too.

I'd use all 4 and always put veg in- then there will be leftover for someones lunch as well.

It's shit I get you, but for most families who eat a good diet it's not a bad thing to eat less meat and more veg. I'm a commited carnivore but I can see that using less meat in general is a good thing all around.
Adult recommended protein requirement is lower than most people imagine.

If you’ve got a tin of baked means, empty them into a sieve, rinse under tap. Drain any excess water and add to curry. Good way to use the cheapest baked beans.
