What do you eat with sauerkraut?

I've had a jar in the fridge for ages and just don't know what to do with it. I don't dislike the taste but what does it go on/with? How do you eat it?

I used to make live sauerkraut for a farmer’s market so I do know what I’m talking about
I've considered this, but you say 'used to' so I presume you decided it wasnt worth it?
(I know I'm being lazy & should do my research but I hope you'll indulge me as a fellow maker of sauerkraut😇🙏)

Oh, and from a financial point of view it was ok; about £1500 a month income working roughly three days a week.

I've used it as kimchi substitute in recipes - added a bit of gochujang or hot pepper flakes. Waaaay cheaper than kimchi

Bigos! Polish sauerkraut stew with chopped fried spicy sausage (ideally from the Polish section of a supermarket but you can use eg chorizo instead). There are a lot of variants but my Polish ex used to fry up onion and grated carrot to add in, and some tomato puree. Delicious.

Also you can make it into more of a salad by adding grated carrot and finely sliced onions and peppers if just sauerkraut on its own is too overpowering. Goes beautifully with schnitzel and mash or boiled new potatoes.

Probably the only good thing that came out of my relationship with my Polish ex was being introduced to sauerkraut and gherkins and the many recipes they can be used in 😆

it's good to know that the demand is there, but sounds like premises would be needed ( I have a small kitchen) and 'industrial' equipment? I will take note of your replies and have a look into the Polish methods☝😁

I make kraut home made ( cabbage to Himalayan salt) 1:2.5g)) and eat it on a tortilla wrap with raw spinnach, after 10 days fermentation in winter.

Not tried it with anything else, its nice raw, on ir's own but I don't eat too much........~runs to bathroom~
