The Sussex Carol is my all time favourite but I love so many others:
O, Little Town of Bethlehem
Hark, the Herald Angels Sing
God Rest Ye, Merry Gentlemen
Good Christian Men Rejoice
Christians Awake
Good King Wenceslas
The Zither Carol ….
And many, many more.

Oh yes, I'd forgotten about the Sussex Carol.

Ok then, I've narrowed it down to three.

God Rest Ye Merry, Gentleman

Partly for the fun of the mens/womens singing bits but mostly because of the year our minister properly lost it and had a rant about where the comma/pause should be: It's not the gentlemen who are merry! They've not had a night out and drink too much! (etc, etc)

Adeste Fidelis as a decent ‘belt it out and raise the roof’ hymn as the Christmas Eve finale. Must be in Latin though.
A pure voice opening Christmas with Once in Royal David’s city.
Silent night at our candlelit village Carol service.
To play, Lo How a rose ere blooming or O Holy night. Love the Sussex Carol too.

I love Adeste Fidelis and yes it has to be Latin, also Silent Night would be my 2nd. I love Long Time Ago in Bethlehem but it has to be the Harry Belafonte version.

I love O Holy Night, Gaudete and the Coventry Carol.

If you like those you may like the Wexford Carol. Fairly new to me but apparently is an old Irish carol.
