Kids breakfasts that don't involve cereal, bread or eggs

8 yo dd eats a LOT of stodgy processed white bread which we are trying to cut down on as it is causing her some health issues. She's a good fruit and veg eater but is fussy about cereals (only likes sugary unhealthy ones) and can't eat boiled eggs/ scrambled eggs/ omelette (though can have them in pancakes etc). She doesn't like brown bread unfortunately.

I'm a bit stumped for filling breakfast ideas. So far I've come up with homemade banana pancakes and smoothies with porridge oats added. Also baked beans, or maybe some sort of beans hash that I can make in advance and reheat in the mornings.

Anyone got any good recipes that are quick and easy, or can be made in advance?

Greek yoghurt with defrosted frozen berries (and some nuts / seeds / low sugar granola if she likes crunch)

Would home made bread be better? If so then a breadmaker is a godsend.

Mine like a continental style breakfast slice of cheese, ham or salami, yogurt and a piece of fruit or greek yogurt with fruit.

Could she tolerate egg in a flourless breakfast muffin?

There is no such thing as breakfast food! Give her anything she will eat that you deem to be acceptable. Rice? Soup? Pasta?

I do cheesy polenta muffins that I freeze and then defrost and reheat in a microwave, split and butter for breakfast.

I used to make quinoa, brown rice or buckwheat in the rice maker and then have it cold with chopped fruit & Greek yogurt in the morning - quite nice and it really did me some favours health wise.

Have a look at some baked porridge recipes. You can bake it in advance like a cake, then cut it up and keep it in the fridge.
Does she like weetabix?

Scotch pancakes easy to make quick to cook. You can make batter the night before

My secret weapon was omeloaf.

Beat two eggs, lob in two tablespoons of paxo stuffing, leave for ten minutes to thicken. Add milk to reduce stodge to a porridge consistency. Add a little oil to frying pan. Heat and add slop to pan making small rounds. Flipping when cooked on one side. Then serve hot.

Muffins, porridge, pancakes made from chickpea flour. Kedgeree made in advance.

Porridge? Overnight oats? Or homemade flapjacks with low sugar and lots of fruit?

Remember that breakfast is the meal you eat in the morning not a type of food, so pick any of the healthy foods that she likes, it doesn't have to be 'breakfast food'. Give her soup or fish pie or spaghetti Bolognese, it's all fine!

All eaten at our house at different times.

Cheese scones, Porridge, bacon. Ham and cheese on crackers or Oatcakes.

Or have bread/toast but toppedd with beans /bacon/ ham/cheese/ peanut butter to even it out a bit depending what the bread issue is?

Or have her preferred cereal but add to the meal - fruit/ some yoghurt/any of the above so it isn't just "sugary cereal."

Yogurt and fruit with flaxseed or chia seeds
Baked oats with fruit sliced like a cake or made into muffins
Oat based pancakes (whizz oats in nutri bullet to make oat flour)
Porridge with chia jam
Baked beans with sausages / ham / bacon / cheese / sautéed potatoes
