Lemon curd on toast.

I have bought lemon curd to have on toast but I am severely underwhelmed... I used to eat this when I was a child but it's no where near as good. What have I done wrong?

How do you want your curd in toast??

Another vote for Tesco Finest. Also.. anyone tried it with mashed banana on toast / in a sandwich too? Food of the Gods! :-)

Yes! The combination of the bitter / sweet / salt (and delicious, delicious fat content) is what makes it.

I'm decidedly unfussy about the brand / type of lemon curd or bread, but the butter has to be good - ideally Irish butter such as Kerrygold.

This has reminded me to ask my mum to make her annual trip to Waitrose to get me some orange curd 🍊

I love homemade lemon curd on toast. As other pp have said it's easy to make.

Also, silver shred, lemon marmalade is great on toast.

Lemon curd tarts are quick to make - also lemon meringue (from the Be-Ro book). I always use extra egg whites for the meringue and make an egg custard tart with left over yolks at the same time.

I'm off to buy lots of lemons now! This thread has brought on a baking attack.

It really does need the butter otherwise the bread can be too dry with just the curd. It's not a dense enough spread on it's own

What you buy now bears no resemblance to what you got years ago. Now it's all artificial and margarine rather than butter and lemons. Agree, make your own (I do it in the microwave, takes 10 minutes tops including juicing the lemons) or go for one of the 'homemade' types - but even then read the ingredients. Some of them aren't much better than the mass produced supermarket own brand.

Rookie error, OP - the cheap own-brand stuff is absolutely awful, basically yellow wallpaper paste. The good stuff is a world away from that muck.

I have only two things to say,

Firstly Don't bother with buying lemon curd, making it yourself with untaxed Almalfi lemons is the way to get it taste like lemon curd

Secondly Don't bother with toast, hold out for the real deal

I used to make lemon curd years ago and orange curd too, homemade is the best and not that tricky.

But you should get some marshmallow fluff and put it on top, lemon meringue toast.

I’m afraid I’m going to say nothing is as yummy as homemade and is pretty quick in a microwave. Here’s my recipe; it will make 2 jars of utter heaven and keeps in the fridge for a couple of weeks:

225g castor sugar, finely grated rind and juice of 3 lemons, 100g of butter, 3 whole eggs or 4 yolks (I find the latter a bit too rich and the whites thicken it quicker)

Sieve the eggs (I put a sieve over a jug/bowl and give the eggs a quick whisk) leave to drain through whilst you prepare everything else.

Put the butter, sugar, zest and juice in a microwaveable bowl and microwave til the butter is melted and the sugar dissolved. Keep stirring every 30 seconds or so.

Once done add the sieved eggs, whisking as you do, then back into the microwave for 30 second bursts, whisking between each one until it’s the consistency of pouring custard. Put into jars, allow to cool, then into the fridge. It will thicken up as it cools.

If you want it more lemony, mash the zest and sugar together to release the oils from the zest before adding the juice and butter.

It sounds a faff, but really isn’t, and takes perhaps 15 minutes start to finish. Stirred into Greek yoghurt is nearly as good as on toast (no butter needed).

I am def trying this. I love lemon curd frosting (cream cheese, lemon curd and icing sugar).

Ok I've made a terrible mistake. Cheap 79p curd is getting chucked and I'm going to Tesco for their finest 👌🏻

Buy a decent brand, not a cheap one, and put a spoonful on some Greek yoghurt. Bliss. Although, now I think of it I bought a Bonne Maman one a few months ago and disliked it. Found it greasy. Currently on Waitrose own brand. Delicious. They also make a passion fruit curd which is pretty good.

I had a passionfruit curd from Aldi a while ago and it was utterly delicious. They haven't had it since and I haven't seen any elsewhere. A trip to Waitrose beckons...
