Please suggest a good cake for me to bake… but nothing too complicated! 🍰

I’m going to a friend’s for lunch at the end of the week. She’s providing the lunch but I said I’d bring a cake for dessert.

I’m a bit lacking in inspiration! Last time a took my super lemony lemon drizzle, so should do something different, but not sure what.🤔

What fairly straightforward cakes would you suggest?

thanks!

Check out Jane's Patisserie online- every recipe I've baked from there has been fantastic- and simple to make.

This a thermomix recipe but easy enough to convert to normal as it's just mixing everything together.

Vintage school dinner cake Easy to make, plain sponge with jam and desiccated coconut on top.

rum & apple cake with caramel and rum sauce
Can leave out the rum in the caramel sauce.

Peanut butter & banana cupcakes

Coffee and walnut if that's your thing. Mary Berry has a good recipe, the frosting alone is delicious! Or carrot cake- I cheat and use a box because it never fails unlike my homemade version.
Depends how heavy the lunch is, but a really good homemade classic chocolate cake takes some beating IMO.

It’s more a dessert than a cake

Ooh parkin for autumn! Very simple and lovely with custard. BBC good food has a good one. Top tip- add some fresh, finely grated ginger.

hugefanofcheese · 23/10/2022 10:34

Plus it is best after sitting for a few days in the tin so you could make now and get ahead of yourself.

AlwaysLatte · 23/10/2022 10:36

This is something I've made a few times and it always has favourable comments. It's delicious!

Nigella's clementine cake is easy and delicious - and works well as a dessert. I often throw some chocolate chips in too

I love a really simple seedy cake (Madeira loaf with caraway seeds). So underrated, and really simple. Just use really really good butter and flour.

PermanentTemporary · 23/10/2022 10:51

I love bara brith, and it is the easiest cake in the world. It doesn't look at all glamorous which might be an issue but it's incredibly moreish once you get going.

The only 'complicated' but is remembering to soak the dried fruit in tea overnight before the 2 minute process of mixing it up and bunging it in the oven. I think I once soaked it in orange juice, that was nice too.

French Yoghurt Cake

You use an individual pot of yoghurt (any flavour, but hazelnut, lemon or coconut are my favourites) and the use the empty pot to measure the other ingredients.

1 pot yoghurt
2 pots sugar
3 pots self-raising flour
3 eggs
1 tsp baking powder
½ pot oil
Pinch salt

Mix it all together. Put in greased 20cm round cake tin.

30 - 40 minutes at 180*c. Cool.

We're meeting friends for an autumnal walk next week so will definitely bake 2 cakes from this thread to take with me.
