I really fancy a big bowl of hearty soup

I'm at work, cold and hungry, and am looking forward to making some soup when I get home.
I love a good bean and vegetable soup. Gordon Ramsey has a really good one.

What are some favourites that you can recommend?

a bag of frozen butternut squash, some chopped onion, veg stock, a tin of tomatoes and red thai curry paste to taste when you blend it.

One of my DDs wanted some ‘proper’ chicken soup. I’m making some at the moment but it will take a few hours - chicken, carrot, parsnip, onion, celery, tomato, garlic and peppercorns. Will serve it will soup egg pasta.

I like a spicy butternut squash or pumpkin soup as described above! I also like a similar-idea curried parsnip soup using peeled and chopped parsnips instead of squash and an indian curry paste instead of thai, very tasty but be warned, it does have a certain, erm 'tuneful' affect on the digestion, so much so it's known as 'parp soup' in this house Blush

Leek and potato is so comforting too, lightly saute some onion, peeled chunks of potato and a clove of garlic (optional), then add leeks and stock, some herbs, seasoning and grated nutmeg, cook until the potatoes are soft (roughly 20 mins), you can add cream before blending but I find the potatos make it beautifully thick and creamy without needing to add much. I like it super smooth but you could leave some chunks if you prefer...

This is a lovely recipe for a very filling and cheap carrot soup.

I've just (extra points for home made chicken stock) made a minestrone type soup. shallots, celery, potatoes, kale, splash of sherry vinegar and a parmesan rind. It smells lovely. Benefit to wfh.

This is a really nice lentil soup. It's really cheap to make and very healthy. Be careful with the chilli flakes, but don't leave them out as they give such a boost to the soup. Same with the cumin - you can use ground cumin instead of cumin seeds, but don't leave them out!

I made butternut squash soup yesterday

800g BNS
2 Medium onions
1.5g mild curry powder
2 pints veg stock
S&P

Roast the squash and onions until tender, put in a pan with the stock, bring to boil and simmer for 15 mins, leave to cool and then blend. Toast the curry powder on a low heat until fragrant and stir into the soup, add S&P to taste, reheat. Eat

French onion soup is a favourite here, especially with toasted cheese on a slice of baguette floating in the bowl. A real winter warmer.

Sorry, no recommendations but I'm unashamedly marking place for ideas. Though I'd like to be able to bung something in the slow cooker for when I get home, if possible.

Peanut butter soup is quick and filling. I don't have my recipe to hand but this one looks OK - you can add pretty much any vegetables you have in the house instead of kale if you adjust cooking times.

I made "fridge leftovers" soup yesterday: red onions, garlic, shredded carrots, cauliflower leaves, courgette, cooked potato, wholewheat pasta, 2 tins chopped tomatoes, Marigold stock, mixed herbs.

Had intended to add a tin of black eyed beans but thought it didn't need it in the end. Was just right for a cold day and there is some left over for tonight.

I made an amazing pumpkin soup the other day but unfortunately did not use a recipe so will never be able to recreate it.

It involved onion, carrots, pumpkin, garlic, ginger, cinnamon and nutmeg. Possibly some other herbs or spices, can’t remember.

Carrot and ginger is another favourite of mine. I also love minestrone but I can’t make it taste good when I make it

Made this last week and it was unreal. Very substantial too. Had it for lunch a couple of days and for dinner over brown rice. Didn't have spring onions so subbed in a leek.

Proper chicken soup using ninja multicooker

Stick a whole chicken in with 2l water, 3 garlic and random herbs (rosemary, thyme, etc) and 2-3tsp salt
Pressure cook 20 mins
Remove chicken, chuck in diced veg of choice (carrot and leek for us)
Pressure Cook 5 mins
Shred chicken and mix back in

So nice. Loving my ninja.

My family's favourite soup is adapted from a Delia recipe I think. Fry diced red onion and carrot and add garlic once tender. Add tomato purée and stir for a moment. Add salt, pepper, rosemary and Knorr vegetable stock. Simmer for 10 mins then add macaroni and a couple of tins of borlotti beans and simmer for another 10 mins. Blend half of it if preferred. I like it left chunky. Delicious served with grated cheddar on top.

I love soups for lunch at this time of year. They can be a bit of a faff to make but I generally get 6 or 8 servings which I put in the freezer in work and then just take out when I fancy it. I don't like having the same soup more than 2 days in a row so keeping it in the freezer saves waste!

I'm having "my" soup for lunch today, I never know what to call it! But here's what's in it: 1 onion, 2 celery sticks, 2 carrots, 1 red pepper all finely diced. Sauteed until soft with lots of salt & pepper and some garlic, then add tomato puree and cook that off for a couple of minutes. Add 2 tins of good quality finely chopped tomatoes (I use Mutti) and a chicken stock pot/cube and some boiling water, a big cup full of frozen sweetcorn and then bring to boil and simmer. I also add a good shake of chilli flakes and if I have mixed beans or canelloni beans I'll add them, sometimes add some red lentils or tiny pasta shapes but it's good enough with just the veg.

You will love it! having one save my life I think.

Here is a soup I make - serves two, have it with crusty wholemeal/seeded bread and butter.

Half a bag of kale (remove any particularly tough looking stems)
Veg stock melt, made up to half a pint with boiling water - put this in last.
One large roughly chopped courgette (washed but leave skin on)
One large tin of Cannellini bins, drained
Small bag of frozen peas
About 100ml single cream
(I also stir in about a quarter/third of a bag of spinach when the soup has cooked, the heat is enough to soften.)

I basically just put everything in and do 15 minutes on the Soup (med pressure for an IP - I think, I don't have an actual IP) setting, and allow a natural release. Might saute the kale first (just turn onto a basic setting and stir around with no lid on - can do this in bit of butter flavour...), but it really is just a case of dumping in, set going (or on timer, as it does keep warm very nicely, and may thicken a bit). When done and pressure released, blitz with an immersion blender (keeping the blade off the bottom) but not to a super-smooth consistency, leave some texture.

A nice sprinkling of a grated mild cheese tops it off perfectly!

EvilRingahBitch we had a roasted red pepper, sweet potato and peanut soup in a restaurant a few years ago - it was so delicious I've been recreating it in various guises for ages. I'm going to try yours!

I second the BBC Lentil and carrot one posted upthread - delicious. This one is also lovely and quite substantial due to the beans Tomato soup

Love soup and will be stealing some of these ideas to make.

My easy 'sort of soup' work lunch is to put half a pack of filled pasta, a grated courgette, some Marigold powder and a teaspoon (or icecube, I freeze it to avoid wasting the jar) of pesto in a tub, then at lunchtime add some water from the hot drinks boiler and microwave for a minute or two for a pasta and vegetable soup.
