I really fancy a big bowl of hearty soup

I'm at work, cold and hungry, and am looking forward to making some soup when I get home.
I love a good bean and vegetable soup. Gordon Ramsey has a really good one.

What are some favourites that you can recommend?

Anything you've got in with onions and garlic as a base. Tomato or pea soup are very easy.

I chop the onions and garlic together finely in the food processor first, then cook slowly in oil for ten minutes. I'd probably add a stick of celery as well to the processor for tomato soup. Then you add the veg - tinned tomatoes or frozen peas are fine for tomato or pea soup. Add more boiling water than you would for cooking veg normally, and a stock cube. Simmer the soup for however long it takes for the veg to be cooked. Only 5 minutes for peas, I'd probably leave it ten for tomatoes. Then I use a wand to whizz them up smoothly, put them back on the stove for a couple of minutes to heat through and add salt and pepper. Put cheese, yoghurt, chilli flakes, croutons, whatever on top.

I cheat at ramen. Get the noodle packets from the Asian supermarkets and add more water , spinach, mini sprouts, fine shredded cabbage, boiled egg and some leftover chicken or Quorn pieces

I use Itsu miso sachets as a base for "ramen". Then after pouring on the hot water add in anything that will cook/heath through quickly in the microwave. Tofu, edamame beans, sweetcorn, ready noodles, that kind of thing. I always have bit of cooked chicken or prawns in the fridge to chuck in as well, and squirt some sriracha over at the end. Really quick, <5 minutes and so tasty.

I made a veg and bean soup which has made me feel a lot better.
Fry finely cut onions, carrots, celery, garlic, seasoning, dried thyme and rosemary until veg are slightly brown. Add tomato purée.
Add water or stock. Add beans and a chopped up potato. Cook and then blend around a third of it. It's really good.

I bloody love a soup. I tend to roast a chicken every other week so make my own stock, which gets used in soups and risottos.

Currently got a butternut squash one in the fridge for this week's soup. Will have it for lunch to stop me being overly carby.

I've bookmarked a few of the recipes upthread

It does sound nice doesn't it...... I am only worried about the "tempering"; I am sure to end up with scrambled eggs in there somehow.

Your soup sounds lovely; I am off to Tesco shortly, and will be getting ingredients.

This thread inspired me, it's wet and cold here so I made soup in instant pot with Kale, carrot, spring onions, courgette garlic (from Lidl food in jar of oil) with herbs and stock cube. Was delicious and warmed me right up

Oooh yes!! The annual Autumn Soup thread. One of my favourite seasonal threads that come up.

We eat h/m made soup pretty much all year round apart from the height of summer. We have a bowl for lunch most days and there's always a pot on the go and a freezer full of individual portions.

"Goodness in a bowl" my daughter once called it and it's stuck in family lore.

Not read all the thread but noticed there is a lot of butternut squash going and that's what i made today.
Onion, garlic, fresh ginger, fresh turmeric root, butternut squash, red lentils, veg stock, coriander. Whizz. Lovely. That's lunch for tomorrow done.

I also have a brocolli that I will make into soup. So simple. Brocolli and garlic and engivita , stock. Whizz.

A nice one for a warmer day is pea, loads of fresh mint and cannilenni beans. Probably got one or two more from the giant mint bush in the garden this year.

Another favourite is Jack Monroe's lentil, spinach and lemon.

And one that we used to always have was chunky veg. Onions, leeks, potatoes, carrots, turnip, kale. But i don't eat it so often these days as I find it hard to digest.

Spicy tomato and veg. Basically a thinner ratatouille with stock, with kidney beans and chillies and some broken up spaghetti. Bit like a spicy minestrone I suppose.

Leek and potato always goes down well here. And celery and potato too. Tofu and thai coconut soup would be more a treat dinner. Also a creamy chunky, cauliflower, brocolli, green beans and sweetcorn. Oh, and a creamy sweetcorn soup. Half blitzed half not blitzed.

I love my soup! 😅

Going to have a look back for ideas.

I bloody love soup! My kids take it to school at this time of year for lunch and I love knowing they’re having some veg.

My favourite is lentil.

I haven’t got the recipes to hand but you could google - carrot potage & parsnip & apple. My Mum makes both & they are delicious. Recommend BBC Good Food for everything!
