Fireworks display - what food vans would you like to see?

I'm helping organise a fireworks display on bonfire night and we're expecting a crowd of around 1500 people.

We have stalls selling local hot dogs and burgers but this won't be enough, the queues were huge last year.

What other food stalls would you like to see? We have a cake stall and bar already.

Always love a paella stall. Jackets potatoes are good on a cold night too (and quick to serve!).

I like that hog roast / pulled pork type sandwiches. Things easy to eat.
