I don't know what to do with this aubergine

Please help a viper out... there is an aubergine in my veg box and I don't know what to do with it. Can anyone throw me any inspiration?

I have a well stocked spice/herb rack, usual pastas and rice in the cupboard and tinned tomatoes, curry paste etc. I still have some little potatoes, mushrooms and a cabbage left in the box.

DH is out at his hobby and due back in an hour - is there a quick aubergine recipe I can rustle up? Preferably veggie?

I don't know why but I'm intimidated by aubergines! Blush

Aubergine parmigiana (you could substitute cheddar if you don't have parmesan - it won't taste as good but it won't taste that bad either... one aubergine would serve two people for this - just make it in a small baking dish).

Pasta alla norma (but you'd need feta...)

If I can't be bothered/am in a hurry, I cook a bog standard tomato sauce base and add cubes of pan fried aubergine, then serve with pasta.

they’re quite nice fried in breadcrumbs, sort of like a veggie Milanese.

*I'll just caveat - one aubergine serves two as long as you have some extras... garlic bread/potato wedges/something else...

This miso braised aubergine is delicious and easy to cook. I imagine it would be easy to scale down to one aubergine.

grate it and put it in a tomato sauce for pasta.

cantine at work often serves half a baked aubergine. topped with feta and tomato chunks.

this is a great recipe for aubergine… basically any tomato sauce you like… but prep the aubergine like this.

Cut in half and score. Rub with harrisa / olive oil and bake for 30-40 mins until soft. Add feta for the last 20 mins if you have some. Delicious.

Oh thank you! These are all great.

I'm going to have to get to grips with my aubergine fear and try all of these recipes.

For tonight I'm going to griddle the aubergine and knock up a quick garlic and chilli tomato sauce to pour over and top with feta (thanks to @greenacrylicpaint for reminding me I have feta in the fridge to use up!). I've got half a bag of salad to use up to serve on the side and there's a glaring baguette in the freezer I can add.

I found this a couple of weeks ago and it's delicious. We have it as one of our curry sides all the time now.

I like aubergines slices roasted with harissa with salad leaves, pomegranate seeds and feta.

Or halved and roasted then topped with hummus.

I also use them a lot in vegetable curries.

So to report back - this was what I rustled up.

Have to say, I surprised myself and actually enjoyed it! Found some Parmesan and sprinkled that over the feta and it was very tasty.

Roasted aubergine with hummus sounds lovely, I'm definitely going to try that.

I'm an aubergine convert now!

That looks great. God I wish I had some lovely salty feta now!

Before I discovered the curry recipe for mine I used to just chop it up and add it to things as a bit of a filler, so it's nice to stop buying one then throwing it out two weeks later after it's been ignored and gone squelchy in the fridge make them the centre of a recipe.😀

I make a sort of Ratatouille over lentils. Cook lentils as per usual. Chop aubergine and courgette and tomatoes, cook in microwave until soft then finish of by drizzling olive oil and salt and pepper then roast in hot oven. Serve over lentils.

If you are feeling adventurous you can add olives, garlic, shallots,cheese, spices etc. It's my no meat Monday dish.
