Please help a viper out... there is an aubergine in my veg box and I don't know what to do with it. Can anyone throw me any inspiration?
I have a well stocked spice/herb rack, usual pastas and rice in the cupboard and tinned tomatoes, curry paste etc. I still have some little potatoes, mushrooms and a cabbage left in the box.
DH is out at his hobby and due back in an hour - is there a quick aubergine recipe I can rustle up? Preferably veggie?
I don't know why but I'm intimidated by aubergines!
