Gnocchi what to do with it

I have some in the fridge that I need to use.

Can I have some recipes you have tried and tested and tweaked please?

I know I can google but the recipe suggestions on here are usually a lot better and usually more inventive.

The only think we don't eat is aubergine.

The quickest and easiest is to boil it for a couple of minutes and then tip pesto over it. Delish.

Boil then pan fry with some asparagus/any random veg you have left over. Cover it in Parmesan

I put the gnocchi in a tin with vegetables, garlic, seasoning and olive oil. Bake in oven for 25/30 mins. Yum.

This is a good starting point, I adjust the seasoning to taste. Its quite a yummy dish but I find hello fresh recipes are very light on seasoning.

Cook chicken, mushrooms, bacon and onions in a big pan. Whack in some garlic, white wine, grain mustard, but if chicken stock to taste, simmer down to a tiny amount of liquid, add the gnocchi and some double cream

We make gnocchi Bolognese which is a bit like a two layer lasagne but with gnocchi instead of lasagne sheets. Decent Bolognese in a roasting dish and top with gnocchi in a white sauce, sprinkle with cheese and bake.

You can also roast them like mini roast potatoes.

I’m currently baking some with leeks, garlic, lemon zest, vegetable stock and some cream. Bit of grated parmesan on top.

I also like gnocchi with wild garlic pesto at this time of year.

I think you can also tray bake them til they’re crispy / have a Google for recipes.

Boil,drain and either pan fry on butter or tip some (whatever) sauce on them.
Enjoy,they are one of the quickest and versatile food 😋

I haven't had gnocchi in a long time, but last time I made a bolognese sauce and had that with gnocchi, instead of spaghetti.
You could also make a lasagne type dish. So, gnocchi and bolognese, with a cheese sauce and a green salad.

I always like them roasted - a crisp outside makes them less stodgy.

In a roasting tin with sliced red onion, peppers, lots of cherry tomatoes these cookies down into a sauce), chorizo, +/- aubergine or other Mediterranean vegetables. Drizzle with olive oil and roast in the oven for 30-40 mins turning every 10-15 mins to make sure the gnocchi goes slightly crunchy. Serve with salad. Easy and delicious.

I like them with pesto.

I make my own and it beats any jar.
Buy a big bunch of fresh basil . Wash it and keep leaves only.

Weight your basil and you will need the same amount of grated real parmiggiano / grana padano cheese. Half of that amount in pine nuts , and something like 1.2 the amount of extra virgin olive oil, 1 clove of garlic and some salt.
A typical bunch from my supermarket will give me approximately 80 gr of basil leaves, so I will add 80 gr of cheese, 100 ml of olive oil and 40 gr of pine nuts, 1 clove garlic, a bit of salt. Blitz with a food processor or even blender.

In the few seconds before you drain the gnocchi, take some of the cooking water in a mug so you can add some if too dry.

My dirty "cooking for 1 meal" in chopped up leeks, streaky bacon, cooked chicken breast, sweetcorn & gnocchi all fried off together in garlic butter served with a full thick layer of grated cheese on top! I have it whenever DH is out for the evening!

Bake it, don’t boil it, boiled gnocchi doesn’t have a nice texture.

I roast a variety of ‘summery’ veg, peppers, toms, garlic etc. the gnocchi itself takes about 12 minutes to bake, I then season the whole thing and put fresh basil on to serve.

See I didn't know it could go in the oven.

I'd of never of thought to pan fry it either!

I have two packs so I'm going to definitely try a couple of these recipes.

I'm also going to attempt to make my own pesto next week when I go shopping so I could boil them, pan fry them and put my pesto on it for one dish. I'm definitely going to add some asparagus also as it's my favourite.

Did you know that only 25% of people can smell in their urine when they have eaten asparagus. Apparently anyway.

I think this is going to be something I will buy more often as it's quite a cheap meal.

My DH doesn't like it but my dd8 hasn't tried it before so we could make the pesto together when he's away next.

So many options they all sound lovely.
