Gnocchi what to do with it

I have some in the fridge that I need to use.

Can I have some recipes you have tried and tested and tweaked please?

I know I can google but the recipe suggestions on here are usually a lot better and usually more inventive.

The only think we don't eat is aubergine.

I like them with pesto.

I make my own and it beats any jar.
Buy a big bunch of fresh basil . Wash it and keep leaves only.

Weight your basil and you will need the same amount of grated real parmiggiano / grana padano cheese. Half of that amount in pine nuts , and something like 1.2 the amount of extra virgin olive oil, 1 clove of garlic and some salt.
A typical bunch from my supermarket will give me approximately 80 gr of basil leaves, so I will add 80 gr of cheese, 100 ml of olive oil and 40 gr of pine nuts, 1 clove garlic, a bit of salt. Blitz with a food processor or even blender.

In the few seconds before you drain the gnocchi, take some of the cooking water in a mug so you can add some if too dry.

I tried a recipe for gnocchi the other day which I loved from Abel and Cole. You can find it here -

Essentially you roast off beets and red onion and then add them in to gnocchi pan fried with garlic and rosemary. Really good, although very beet heavy so no good if you don't like them!

Slice a red pepper and an onion, crush a garlic clove and then soften in 1tbsp olive oil for 5 minutes, in a large saucepan.

Tip in a tin of chopped tomatoes, plus the gnocchi. Cook on a low heat for about 10-15 minutes until the gnocchi is soft.

Chop and stir in a handful of basil leaves. Transfer to an oven proof dish. Chop up a mozzarella ball and place the pieces evenly over the top.

Heat under the grill until the mozzarella melts and starts to brown.

Serve with garlic bread.

I use it as a side, eg with salmon. I cook it and then add butter and parmesan.

Very, very handy.

I second the MOB recipes.
Also, I discovered gnocchi goes surprisingly well in a curry! I sometimes use instead of rice if I've overdosed on rice that week.

This is also a firm fave:

Spread gnocchi out on baking tray, with a little oil and seasoned. Bake in the oven.
Squeeze sausage meat out of some good quality sausage and gently fry off in balls.
Once the sausage balls are browned, add a chicken stock cube, a tub of creme fraiche and a splash of water. Once thick and creamy, add some frozen peas.
Add baked gnocchi, stir. Eat. So easy and very tasty.
