Can you help me to add some meals to our rolling menu?

On our rolling menu plan we have these meals as follows.

Roasts, fish and chips, chorizo pasta, baked potatoes, homemade pizzas, chicken tikka masala, lasagne, burger and chips, chicken jalfrezi, sweet and sour chicken, egg and chips, Chinese curry, chilli, fajitas, shepherds pie, fish with veg, scampi and chips, other various pasta dishes, Nando's style chicken, spaghetti Bolognese. Other types of curries.

I need to think of some more ideas.

Smoked haddock cheese bake , haddock and leek risotto , salmon traybake , salmon encroute , salmon fillets with veggie rice / roasted peppers/ tomatoes . Chicken enchiladas . Chilli rice bake . These are some of the staples here .

Thanks, definitely want to add more fish to our meals.

Stir fry is definitely missing. I stopped making them because we had a few that turned out really bland but really should start making them again.

Stir fry’s with chicken/beef/pork/prawn/tofu/salmon/cashews and egg noodles/rice noodles/rice with hoisin/sweet and sour/black bean/sweet chilli sauce.
Shakshuka, fritata, quiche
Sausage casserole, sausage and mash, toad in the hole.
Fish cakes, tuna pasta bake, cod wrapped in prosciutto, smoked salmon with pasta, cream cheese and broccoli, crab with garlic and chilli linguine. Tuna steaks with balsamic veg.
Stuffed mushrooms
Leek chicken and bacon bake.
Quasedillia
Chicken and pineapple skewers
Tacos
Chicken stuffed with sun dried tomatoes, garlic and mozzarella.
Gnocchi with blue cheese and mushroom
Chicken tagine and cous cous
Root veg casserole
Fish pie

We do have paneer curry I forgot to say it.

Stews are definitely missing aren't they, so is pie. I prefer spicy food and tomato based dishes so this is where I need to mix it up a bit and add in a few different things.

Thai curry, chilli con carne and rice, home made pizza and crudites/ houmous, gammon and potatoes and steamed veg, soup made with gammon water, macaroni cheese, salmon with garlic/ herb cheese in puff pastry, sausages and mash, chow mein (can use whichever meat or veg you like and mix with instant noodles - I usually do prawn, chicken, egg, carrots, peppers and baby sweetcorn).

Enchiladas, cottage pie, traybakes (usually do salmon or chicken plus potato plus veg with some kind of spice or seasoning).

Tacos made with wraps baked in the oven, fish cakes, fried rice dishes.

Ghoulash? That's tomatoey and spicy but a casserole. You can make it with dumplings too in this weather.

Tray bakes? Chicken with mediterranean veg all roasted together with lost of garlic, fresh herbs etc. Or marinated in curry spices and baked with root veggies.

Roast salmon covered in sweet chilli, soy and lime juice with rice and veg

Hot pot with finely sliced potatoes that go all crispy on the oitside and soft on the inside.

Sausage beans, greens and mash?

Frittata with salad

Thai green curries

Tray bakes - veg + protein
Curried veg, Med veg, etc - v low effort

You can also do a tray bake stir fry

Sausages n mash (either frozen mash or from baked potatoes made extra earlier in the week)

Fish pie - lots of quick gratin versions

Garden pie - cottage pie w lentils

Mezze - hot spicey lamb sausges, couscous, flatbread, hummus, falafel and salad

Stews - oven or slow cooker - beef and ale, sausages and beans, lamb hotpot, Spanish - chicken and chorizo and peppers or pork and peppers, chicken paprika, pork and lentils etc

Quiche (there is an Australian version where rather than making a crust you just chuck the flour in the mix and it sinks to the bottom

Greek pie - spinach and feta in ready made puff pastry, or baked Camembert in puff

Spanish omelette

Cheese gratin - whatever veg you need to use up, in a cheese sauce with a gratin on top, you can add a bit of ham or whatever if you want.

Pasta carbonara, mushrooms/broccoli/ham, sausage and mushroom, salmon and creme fraiche, pea n pesto

Risotto - chicken, mushroom (there are cheat versions you can do in the oven)

Fish parcels - trout etc w veg and baby potatoes

Grilled mackerel w roasted veg

Was going to suggest that chicken and chorizo jambalaya!

Also, dauphinois potatoes served with roasted winter veg.

  • Paella
  • Shakshuka
  • Pasta bakes made with salmon, tuna or just veggie. Arabiata style is spicy and tomato based.
  • Fish with a crunchy topping. Lemon zest, bread crumbs (I used those golden crumbs), grated parmesan, and 1/2 teaspoon each of garlic and onion powder then pepper. Bake till fish is just cooked and serve with veg
  • Tuna, smoked salmon or tinned salmon fishcakes with salad. If I know I'm making these, I do extra mash the day before to save time the next day.
  • Do you have a slow cooker? Beef cheeks, oxtail and smoked ham knuckle make delicious stews for colder weather.
  • Thai beef salad, som tam salad or laarb salad
  • Tagine
  • Pumpkin, pinenut and feta salad. I serve it warm. Again, I'd normally bake extra pumpkin the day before, to save time making the salad.

  • I don't specifically meal plan, but do when I have roast chicken. Next day the leftover goes into chicken sandwiches or a curry. Day 3, the carcass and any leftover meat goes into a chicken sweet corn soup. Easier than you think and tastes just like the Chinese restaurant version.

I've been doing loads of stuff from The Green Roasting Tin - Rukmini Iyer has a whole series of books with one pot recipes. I would have a look in your local library and see what recipe books you can borrow, I think Nigella ones are really good too. Or get the Sainsbury's or Waitrose food magazines one month, they've usually got a selection of midweek recipes and will give you some more ideas.

I would recommend trying a delivery box like Gousto. They always have a new customer deal of 50% off or more and it makes you try a few new recipes. I have some that I've made from there and now they're in my regular rotation.

I have a fussy eater so some textures are out - most things in sauces, cooked veg (but we just giver her raw), anything one-pot, anything creamy. We're bored of the same few things.
