Can you help me to add some meals to our rolling menu?

On our rolling menu plan we have these meals as follows.

Roasts, fish and chips, chorizo pasta, baked potatoes, homemade pizzas, chicken tikka masala, lasagne, burger and chips, chicken jalfrezi, sweet and sour chicken, egg and chips, Chinese curry, chilli, fajitas, shepherds pie, fish with veg, scampi and chips, other various pasta dishes, Nando's style chicken, spaghetti Bolognese. Other types of curries.

I need to think of some more ideas.

We do have paneer curry I forgot to say it.

Stews are definitely missing aren't they, so is pie. I prefer spicy food and tomato based dishes so this is where I need to mix it up a bit and add in a few different things.

Do a lovely fish pie 😛 most supermarkets do a frozen mix if you can't get it fresh

I have a fussy eater so some textures are out - most things in sauces, cooked veg (but we just giver her raw), anything one-pot, anything creamy. We're bored of the same few things.

Elfy. Same here. For years I refused to cook 2 meals but for past couple of years (since he got to 14) I've get to cook a few separate things or adjust his meal (eg. Plain pasta whilst we have more interesting pasta, rice and chicken burger whilst we have rice and curry). I was worried my younger two were getting quite fussy too but broadening their horizons has been brilliant!

His meals are:
Home made pizza, Chinese style pork and plain rice, chicken burger, actual burger, sausages, plain pasta and cheese, roast chicken, steak, bacon on jacket pots and baked beans, chilli con carne (he eats with Doritos), Chinese roast duck (eats wrap separately, no sauce).

I see he'll eat chilli and baked beans. I make a cottage pie mix adding a tin of baked beans at the sauce making bit. She has it with mashed potato on the side (mashed potato came back about 6 months ago, after a 2+ year break. She hates all beans except in this mix). Obviously these things cannot be cooked together.

I get her involved in the cooking of her favourites and then gently combine things that are acceptable from another recipe.

She does have spag bol, but our regulars are roasts - no mixing of stuff & raw veg, chicken fajitas (lots of sides for the rest of us, but she sticks to cheese, sour cream, lettuce and a few strips of chicken from the mix), jacket potatoes - usually sweetcorn on it. Because of her raw veg thing - lots of salads on the sides of a plain piece of meat, but we can add seeds and nuts lightly. No dressings obviously. Crispy Oriental duck is a favourite. We often do things in a buffet form so she can pick and mix.

Occasional chicken nugget meal, either frozen or from the fish and chip shop.

Thinking about things last night I realised that this variety wasn't something my parents fretted about. Meat, couple of veg, potato in some form was the basis for every meal. I didn't eat Tex-Mex until my 20s, Indian food the same. We'd get a couple of dishes from a Chinese takeaway a couple of times a year and mum would boil her own rice and fish and chips every few weeks. Pizza was something introduced in my late teens. Going to a pub for a meal was so infrequent I remember them all. I like different foods but maybe it's ok for someone not to as long as there's some variety in food groups.

My mantra for a long time I'm sure I read it on here has been 'Everyone fed; No-one dead' as the goal at the end of each day. I'm trying to drop the parental guilt and stress.

I'd still like another meal or two to add to the collection. Home made pizza is something we could try adding, and enchiladas.

Yeah, the 'everyone fed' is a good mantra. Even if he has bacon and chicken burgers pretty much everyday (seems to be his rotation for school lunch, won't take packed lunch). I don't think he will eat baked beans mixed into anything. He won't even eat chilli on jacket potato! But yes, I should probably do pork chops a bit more. Lump of meat and potato is good for him - but I'm trying to move the family more vegetarian. He's strange - loves Lea & Perrins, Christmas pudding, Stollen, Amaretti biscuits, which are all strong tastes!

You need some jerk chicken in there. This is genuinely the best recipe I’ve ever used for anything recipes.sainsburys.co.uk/recipes/one-pot-jerk-style-chicken-and-rice

Also maybe some ribs? Just marinade in bbq sauce and slow cook, with jackets and coleslaw or Mac n cheese!! (Rick Stein’s Mexico recipe is the best imo)

One of my favourite quick meals is Barclay's [[https://www.miguelbarclay.com/sweetcorn-fritters/]] sweetcorn, courgette and feta fritters. His recipes are designed for one so you need to scale up the ingredients.

I also love home made bean burgers and a simple tarka dahl with rice and mango chutney.

There’s a show called my world kitchen on bbc iplayer. We’ve had cool dishes from there: boxty , stuffed pepper, enchiladas, ratatouille. They are easy and quite tasty

Coq au vin (I make a cheat"s version with just chicken thigh fillets). Always goes down a storm with DD.
Egg fried rice with veg and prawns
Alison Roman's chickpea and kale stew is delicious
Also any version of Spanish chickpeas and spinach

Some suggestions:

Green chilli - a Jamie Oliver recipe with pork, peppers, chilli and mint, serve with tacos and sour cream

Flattened chicken with za’tar, flatbreads, cous cous and roast veg

Salmon, roast baby potatoes and peas blended with a bit of mint and cream

Paella

Chinese beef stew (bbc good food)

Genaros Parma ham and red pepper pasta

Slow cooker ham - have with potatoes + cabbage, chips and egg or nigellas creamy ham and pea pasta
