What's the most limited diet a human thrive on

I was chatting to a friend about our ASD DCs rigid diets and started musing about how few foods you could have and thrive. By which I mean get the necessary vitamins and minerals and protein.

I think you could do it on lentils. Am I wrong?

My now grown up son has adhd and we had so much trouble getting him to eat anything other than cereal. From age 6 to 16. That was literally all he'd eat. And he's now nearly 30 and 6 foot 2 in perfect health. His blood tests for vitamin deficiencies always came back ok. So yeah maybe cereal. They are usually fortified with vitamins and iron plus he's eat it with milk so was getting his calcium.

A million years ago when I did O level food and nutrition I learned that the most complete natural food in terms of nutrients was milk. So cereal with milk does sound like it might be the best option. The main nutrient missing from that would be vitamin C.

I remember reading somewhere that you could survive on just coconuts. Thought I'd google it to check and this list from BBC doesn't even mention coconut. According to them, the most complete food is...almonds. Better add some to my shopping list!

Loads of people follow a carnivore diet - basically just meat (and maybe eggs? Maybe dairy?).

I remember watching a show about a boy who only ate jamemsandwiches on white bread for literally years and wasn't terribly unhealthy.

I read somewhere that potatoes have nearly everything you need to survive and have a large amount of vit c which surprised me, otherwise probably legumes , you could live off those I reckon but most people especially children would find potatos more palatable .

Is there enough protein and fat in potatoes. I saw something about people who lived only on yam and rabbits (possibly) and they were ill from lack of fat

I remember watching a programme on people with very restricted diets about 10 years ago. One woman survived mainly on crisps! They all had their blood tested and none of them had any vitamin deficiencies. . It was astonishing.

In the 90’s my brother only ate cereal and chocolate digestives
The doctor said that was fine, and gave him everything he needed 🤷🏻‍♀️
