What haven't I cooked?

Like most people, I'm somewhat jaded at the whole meal planning thing but desperately trying to be more organised going forward into the New Year.
What do you cook that your family love and is slightly different to the usual Bolognese/chilli/one pot stuff that most people do.
I don't mean stuff that I need to live near a trendy London deli to source or need a six figure income to afford or 15 hours a day to prep either Wink Help me out cooking maestros!

Homemade pie (when I say homemade I mean ready roll pastry)
Fajitas
Tacos
Chicken stuffed with cream cheese wrapped In ham
Sausage & mash
Toad in the hole
Veg pasta dish
Beans on toast
Grill up
Picky plate

They are our go to meals after spag bol/chilli etc

We need some new ideas too!

After a chicken roast, next day is normally chicken sandwiches, then I turn the carcass and any remaining meat into chicken sweet corn soup. Easier than you'd think and just like a Chinese restaurant. I dont add olive oil or lemon juice, and often add 2 eggs.

Others I do, depending on the season:

  • watermelon, halloumi, bean salad, pinenut
  • shakshuka
  • Thai beef salad
  • Pad thai. I make from scratch if time allows, but aldi sell some great meal packs. Goan curry, red and green curries etc. They are cheaper than than the blue dragon ones. They only serve 2, so get a few packs. All you add is meat or veg.
  • Paella
  • Sang choy bow
  • Fajitas
  • Stuffed cabbage

Also like baked potatoes, sometimes with baked sweet potato. I then set out bowls of grated cheese, coldslaw, tuna/sweet corn and my favourite is sping onions, cripsy bacon and pinaepple. Very economical too.

I don’t plan usually, I make something out of what I have even if it’s a bit weird. Last night was leftover han from Christmas cubes with mashed potatoes and left over mashed sprouts all mixed together with grated cheese and fried like cheesy bubble and squeak.

Bloody awesome.

If you pick s new recipe off BBC good food or say ITV this morning once a week you can see what works well.

Unfortunately theres only few dishes that all of my kids like. Anything that has about five ingredients or less and cooks in under 30 minutes I'm all for.

The list is endless and you can never get bored of pie.

I would recommend the cookbooks Japaneasy and Noodles and Dumplings for some different ideas. An easy but firm comfort food fave of mine is a white sauce, with a few caraway seeds and a tin of tuna stirred in, poured over cooked macaroni. You can add sweet corn or cherry toms or even peas!

Chicken, bacon, leek and spinach pasta bake - don't have a recipe as such but I fry off chunks of chicken thighs til golden, put to one side. Add chopped bacon to pan, with chopped leeks and nob of butter, fry for few min. Add tbs flour and cook that out, then add some milk and chicken stock to make a sauce. Add in the chicken and simmer for 20 min (can reduce down if necessary) cook pasta, mix in with chicken mixture and couple handfuls of spinach (you can also use this mix for a pie) I then bung in an oven dish and top with fresh breadcrumbs and Parmesan til it's crunchy on top.

Tray bakes are also good - chopped veg like peppers/red onion/squash/new potatoes , laid on oven tray with chicken thighs on top. You can use various flavours so for Greek you would add garlic, oregano and squeeze of lemon , or you could add chorizo and go Spanish etc.

Its essentially Chinese inspired mince pork served in lettuce shells instead of wraps. I use iceburg lettuce that has been sat in a bowl of icy water so the lettuce is crispy. I often add chopped water chestnuts for more bite.
