Like most people, I'm somewhat jaded at the whole meal planning thing but desperately trying to be more organised going forward into the New Year.
What do you cook that your family love and is slightly different to the usual Bolognese/chilli/one pot stuff that most people do.
I don't mean stuff that I need to live near a trendy London deli to source or need a six figure income to afford or 15 hours a day to prep either Wink Help me out cooking maestros!

I have been rewatching Jamie's Quick and Easy food on All4. There are some lovely recipes that I've tried recently, including chicken pie, italian seared beef, a dish with white fish, rice and tapenade and a few others. Loving all of them and only 5 ingredients. Also quick!

I got so bored before Lockdown 1!!! After that I had more time to make pizza from scratch etc.

However, the last few years I've got a Gousto box every fortnight and kept the recipe cards, so I have a massive new array of food for meal planning as I just make them again with the ingredients mostly from Lidl but few additions from Waitrose.

I make LOADS of vege options, including curries, lots of lentils, tins of butter or cannelini beans etc I'd never had thought to use. It's made a huge difference to my cooking repertoire.

We did a few weeks 0f gusto to jazz up the selection as we had runout of ideas, and have repeated quite a few, .like Nigerian chicken peanut skewers, Malaysian curry etc. Maybe worth a try.

Ooooo I’ve got some lovely ideas from here. I know what you mean @Ihopeyourcakeisshit we tend to get stuck in a rut and have the same things and I love trying something new - so thanks for this thread as I’m getting lots of inspiration!
In the oven at the moment is chicken cooked with broccoli, onion and red peppers in a cream cheese sauce mixed with rice and topped with grated cheese.
I usually do a mince meal each week - bolognaise, chilli, lasagne, shepherds pie or homemade burgers.
Tom kerridges cheats fried chicken thighs are yummy.
Pizza - sometimes homemade if I have time. Pizza is what we have when my ds is at his evening activity as it’s quick!
I love a jacket potato for an easy meal but everyone else says it’s boring!! Same with soup!
Usually have a chip meal each week too- fish and chips, chicken or sausage……

In the slow cooker, I do either a beef cheek or ox tail stew. Also pea and ham soup using a smoked ham hock.

I also like my copycat KFC chicken. You can use drumsticks, thighs or breast cut into goujon strips and served with salad or veg.

Mix in a bowl:

  • those golden breadcrumbs or ground almonds for a keto/gluten free version (about 1 cup)
  • 1 teaspoon each of celery salt
  • ground pepper
  • italian herbs
  • paprika
  • onion powder
  • garlic powder (not garlic salt)

The mix should look a pale, salmon colour, so I often add more spices, but not too much celery salt, otherwise its too salty.

Simply dip the chicken into the mix and bake. No need to dip in flour or egg. Just the coating is fine, and if you have extra, do a 2nd dip in the mix before baking.

@lesenfantsdelesperance - I made this one recently and it worked well. The rice took a bit longer than the recipe to cook through (would be quicker with white basmati) and I guess you could substitute the prawns for chicken etc.

I love Vietnamese summer rolls. I buy the wraps when I visit a Chinese grocery store, but Sainsburys do small meal packs now.

Lots of youtube videos on how to wrap them. I serve with a peanut, satay sauce. So refreshing in the summer too.

Chicken & brocolli pesto pasta is quick and easy. Either leftover roast chicken or fry off diced chicken breast then add the brocolli to the pasta pan and mix it all through with pesto. You can add peas or spinach too.

My 15min prep max fave meals are

White fish & veg parcels (super quick prep, 15 mins in oven)
Fish curry
Vegetable Dahl
Teriyaki Salmon with oven roast veg + rice
Stews (beef or Irish stews with loads of veg) in the slow cooker
Chicken tray bake with salad
Fish cakes
Mexican vegetable rice
Quick chicken stroganoff with extra veg on the side (fine beans or broccoli go well)
Stir fry (can use the veg ready bags from supermarket or even frozen can be very nice).
Thai red and green curries usually with prawns or chicken (veg is usually onion, peppers & Pak Choi)

Hope that gives you some ideas!

Also I find it easier to set aside an hour once a month and just plan for the whole month. It's a pain in the ass but at least I don't have to do it every week! That way it can also be a novelty looking for new recipes etc

Favourite treat meals that are more unusual but my whole family will still devour

Katsudon - pork cutlet over rice with a sweet and salty egg sauce -
Nasi Goreng - Indonesian breakfast rice, so much nicer to make yourself than buy premade though you can often find it willing the freezers with stir fries -
Spatzle - buttery German noodles. You can get them premade when Lidl does their Alpenfest special buys -
Bao - soft Chinese bread buns with fillings, also the only yeast thing I’ve ever managed to get to rise right -

Huevos Rancheros - Mexican breakfast food, lovely and spicy but different enough from tacos/fajitas that it feels less boring -

We’re not vegetarian but my wife’s morning sickness always gets triggered by meat when she’s pregnant so we lean a lot on eggs, sorry!
