Veganuary - who's in?

Day 1. Ramen noodles with miso aubergine and Smokey tofu. Was delicious!

Am determined to keep going so hoping others will share for inspiration.

Yum. Me and DP want to loose weight and I do keep pushing him to try very low fat meals but he isn't keen.
I made roasted cauliflower soup today using a slightly soft one we never got round to having with Christmas dinner, it was very filling and delicious. Must admit I was surprised as it tasted a lot better than I thought it would.

I’ve been loosely vegan for a few months now (I know, I know, loosely vegan isn’t really a thing) but I want to try to do it properly, at least for a month. I’ve ordered loads of vegan cheese which a friend assures me isn’t as foul as the usual stuff.

That looks lovely! I’ve been vegan for years but I’ll happily join you for a bit of meal inspiration. I’m trying to eat well after a new baby and Christmas, but am extremely time poor!

Today-
Smoked scrambled tofu on toast with kecap manis

Dinner will be Sainsbos plant lasagne, salad of mixed leaves, celery, olives, capers and those tiny pickled peppers

Breakfast will be overnight oats made with half a tin of mandarins and topped with dates and walnuts, which I managed to throw together whilst DH changed a nappy!

I haven't found many vegan cheese I enjoy, but I love Tyne chease.
This is the recipe I followed for the aubergine. I just diced them as I didn't want slices in my noodles.

Just fried up This Isn't Chicken with garlic and kale and had new potatoes with Naturli Vegan block (which is exactly like really butter btw - total no brainer swapping for that permanently)

I find vegan cheese doesn’t necessarily stand up on its own but is fine to bounce off other flavours

Eg salad with blue cheese, pear, walnut, celery
Cheddar and marmite toastie
Violife Greek style with beetroot or tomatoes & balsamic

Following with interest. I'm dairy-free vegetarian, but seem to be developing a few food intolerances, including peppers and cooked carrot. I need to work out what else is causing issues so I can work around it. I'm hoping it's not gluten but will have to try to test my theory.

I'm in! We always do Veganuary (and dry Jan) to undo some of the 'damage' from Christmas - but I love trying new recipes too, it's not all about weightloss. I made a really nice potato and chickpea curry last night - some of the meals posted above sound great too!

@nosyboot, Alpro do an unsweetened soya cream that works really well as a sub.

Managed to get this into the family dishes today! Cooked in slow cooker, served with rice. I had hot like pickle with mine, but DH said it was perfect as it was for him.

I don't live in the UK but supermarkets here are doing their own brands. I found a pea based one last month which was really great!

I use this to make lasagne filling recipe

, don’t bother with the wine and add a spoonful or marmite and add some extra veggies
Make the white sauce with oatly or almond milk, any vegan butter and flower. I add some mustard and yeast flakes too

I did it last year, I found it okay once I got going. Richmond vegan sausages are amazing so recommend them.

I couldn’t find a nice vegan cheese tho and that’s about the only thing I missed initially but not after a week or so Smile

I would happily be veggie, I think vegan would be very hard, but what I don't get is the abundance of fake meat. There are so many wonderful veggies, fruits, legumes, I just don't get why the fake crap.

I did it last year and was amazed by how much better I felt. My skin actually glowed to the point that people commented on it. I’ve fallen off the wagon and started to eat dairy again, but I want to go back to veganism as I know dairy products don’t really agree with me.

It guess it is to help people who cannot think of a meal without meat, (of which I know many!) but you don't have to eat it, if course! I rarely touch it except for bbqs or if I fancy a burger (beyond burgers are brilliant). It's what meat eaters tend to serve vegetarians, ime.
