Veganuary - who's in?

Day 1. Ramen noodles with miso aubergine and Smokey tofu. Was delicious!

Am determined to keep going so hoping others will share for inspiration.

Having vegan pizza tonight. Same as my usual pizza but I'll have vegan cheese on it instead. Hopefully it will be OK!

Signing in for another year of Veganuary! I'm a pescatarian and haven't eaten meat for a few years (since the first time I did Veganuary) but I do love my cheese. Luckily I also like vegan cheese and don't mind the smell or the sticking to the roof of the mouth Grin

Yesterday was beans on toast for brunch with a little grated vegan cheese on top.
Dinner- Fried rice, chilli pickled cucumbers, chilli baked broccoli and homemade satay sauce.

Today:
Brunch- Avocado on toast with salt and chilli grinder
Dinner- Not eaten yet but we've made a creamy pasta sauce using vegan cream cheese, garlic and mushrooms. We have some vegan bacon bits that will be added in when warming through along with some vegan cream.

Not doing this but eat a lot of plant based meals. Dinner tonight was slow cooked chestnut stew (precooked chestnuts, mushrooms, turnip, carrot, baby potatoes, red onion, garlic, Broad beans, slug of port, vegan oxo, marmite, thyme, pepper) with homemade bread made with olive oil.

We've also pre cooked the veg ready for a roast dinner tomorrow, stock for gravy from the peelings and made a big vat of veg soup from any leftover veg. The soup will do us for lunches for the next few days.

I would happily be veggie, I think vegan would be very hard, but what I don't get is the abundance of fake meat. There are so many wonderful veggies, fruits, legumes, I just don't get why the fake crap.
I agree but don't forget a lot of meat is processed too as is a lot of foods people tend to eat day to day. Fake crap doesn't only belong to the realm of vegan food.

@Icenii Well said. I hate the faux concern of meat eaters labelling veggie sausages, burgers etc as 'fake crap' while the majority of them happily chow down on processed meat.

If I eat fake 'meat' it's because I like the taste of it. Even outside of Veganuary, 80% of my diet is plant based. Lentils, pulses, rice, pasta, vegetables, etc. If I want a veggie burger then I'll eat one, ta. The beyond burgers are bloody lovely.

It's the best thing I've ever done, I can't tell you how much healthier I feel.

Roast dinner tonight, we're calling it Christmas take 2.

Plenty of veg, roasties, veggie gravy and a Sainsbury's no beef Wellington that we didn't get around to eating at Christmas.
We've made stuffing balls with some added chopped chestnuts and the last couple of spoons of leftover cranberry sauce.

We've also made vegan Yorkshire puddings- while they don't look like yorkshires they taste pretty similar and I'm impressed. I'll definitely be making them again and will send the recipe to my sister (who is a full time vegan who misses Yorkshire puddings!)

Me! Breakfast was overnight oats with nuts seeds banana cashew butter and coconut yoghurt, lunch was avocado and spiced chickpeas on sourdough crumpets with tomato, snack was protein balls that I made and dinner was oven roasted potatoes with spiced black beans sweetcorn, lettuce tomato and covered with a hummus lemon and nutritional yeast dressing. I have been vegan just over a year and now it is time to eat more nutritious food now that I am over eating all the yummy processed crap.

For dinner we had peppers stuffed with bulger wheat, courgette, onion, peppers, parsley, mint, garlic, lemon and pine nuts. Served them with garlic and lemon sautéed green beans and new potatoes.

Spag Bol last night with LOTS of veg in the sauce. I like vegan cheese and always have some in even when I'm eating regular cheese so I had some violife epic mature on top.

Easy dinner tonight as a busy day so we're just having Richmond sausages, beans and homemade wedges.

I popped into Lidl yesterday to check out the vegan stuff they have in. I tried some of the aubergine spread and the curry courgette spread on toast for my lunch today. The curry courgette spread in particular was lovely!

😂 the perils of eating vegan.

I didn't fancy our planned dinner so will eat for lunch tomorrow. Instead I cooked mushroom medaglioni that I picked up from Lidl. It was nice, probably not quite aa tasty as a non vegan mushroom ravioli but I made a sauce with a few diced mushrooms, sheese (also from Lidl), lots of seasoning and a touch of oatly cream. Stirred some vegan smoked cheese through at the end- bloody lovely!

We had a fantastic vegan Chinese last night from a local takeaway that does a good range of veg/fake meat dishes alongside the usual meat dishes.

Fried rice (no egg)
Chow mein made with rice noodles
Malaysian rendang veggie chicken
Crispy veggie beef
Vegan fish in garlic salt and chilli

Best Chinese I've had in a long time, including the ones where we usually have prawns. The only letdown is they don't do tofu.
