What do you cook with Boursin?

My favourite- get 4 big mushrooms and store bought puff pastry. Rollout pastry cut in 4 . Put a big mushroom in centre of each. Take out stalk put a blob of the Boursin in place fold round pastry seal with milk put in oven til golden brown. Easiest mushroom wellington in world.

Chicken breasts stuffed with Boursin, wrap in Parma ham or similar, into the oven. Serve with potato gratin and green veg (usually broccoli, green beans and maybe asparagus here). Delish.

Chilli flakes fried in oil, fry some chorizo in it, passtta, then a huge lump of hours in in it so it slowly melts in saude and makes it lovely and unctuous, use as sauce over pasta.

@fmac2987 That sounds delicious. I'm a rubbish cook and worry about undercooking chicken, so can you please tell me do you wrap it in foil and how long does it take and at what temperature? Thanks

Cut a chicken breast through the middle, like a book, open it out and flatten it a bit with a rolling pin, pop a sausage shaped portion of boursin in the middle, roll it up, tucking in the sides (a bit like a spring roll) and then wrap it in bacon (also rolled out with a rolling pin), secure with tooth picks. Cook on a medium heat, with a little oil, in a frying pan for about 25 minutes, turning it to prevent burning.

Fried pancetta, boursin heated and a bit of double cream added.
Mix into cooked pasta. Quick, easy and tasty.

Brown two cut up chicken breasts in a frying pan and then add a tin of baby carrots and enough chicken or veg stock to cover. Reduce until the liquid is almost gone and then add a big dod of Boursin and stir through to make a thick sauce. Serve over rice.

Delia Smith has a recipe where you cook jacket potatoes then scoop out the middle and mix it with Boursin (and some other stuff, I can't remember what - I think cheddar and garlic, maybe herbs), then put the filling back in the potato skins and grill for a few minutes. Delicious!

Sweet potato soup - sweet potatoes cut into chunks, shallots, vegetable stock, garlic, few stalks worth of thyme and parsley, pinch of cinnamon, pinch of paprika, little drizzle of honey, three cups of water and a bay leaf. I put it all in the Instant Pot for 8 minutes on normal pressure and leave it to naturally vent for 15 minutes before releasing rhe pressure. Blend it up with a stick blender until it smooth then stir in Boursin.

These all sound delicious. One of my quickest pastas is a shorter variant of the recipe from @golddustwomen.

Start the water for your pasta. Steam more fresh spinach than you think you will need in a large pot - DH and I love the stuff and use one bag. When the spinach is wilted as you like it, drain thoroughly and chop roughly. Return to pot and chuck in the whole Boursin. Melt over low heat. Add soft Philly cheese for a milder flavour or to stretch out. (Light Philly is fine.) Meanwhile cook pasta of choice. Drain pasta, add to sauce, mix and heat.

Melting Boursin and butter on a baked potato also yields high return for effort.

Bake small potatoes rubbed with oil and salt. When cooked, remove from oven, split, add a tsp of boursin to each spud and return to oven for five minutes.

Pasta, bacon, mushrooms and the peppery boursin.

Absolutely delicious and so quick and easy to do. It works well with the herby boursin too but my favourite is the peppery one.

My favourite lazy meal is pasta with peas, pesto and Boursin.
Sometimes I add in broad beans or edamame beans if I have some in the freezer.

We've had a few soggy bottoms but mostly crunchy...I'll see if I can find it properly written up I think I got it from delia or nigella originally and experimented with different cheeses 😊 it's also the quickest thing if any emergency vegetarian is added to a guest list, at Christmas or otherwise!
