How does everyone cook their red cabbage.

Our milkman is delivering a veg box tomorrow. I have never cooked red cabbage before. Some recipes say cook in vinegar others say serve it with cooking apples.

So please can you tel me how you do yours and how long does it take?

I used to work in a pub kitchen and the chef always cooked red cabbage with a big splash of blackcurrant squash. It's gives it sweetness and makes it retain the red colour which fades if just boiled in water.

Shred fine,h with apple, onion and loads of roughly chopped coriander. Smother in a yoghurt, lemon and mustard dressing for fabulous coleslaw.

I don’t like all the Christmassy ones with vinegar and fruit but I do like it cooked plain and then buttered, or chopped raw and made into coleslaw.

I slow cooked mine yesterday with apple, onion, red wine vinegar, splash of orange juice, slug of wine, sprinkle of brown sugar, cinnamon and nutmeg. Frozen ready to defrost Christmas day.
This is how I do mine. Normally in the slow cooker for a few hours.

I use a combo of most of the recipes here so I’ll refrain from repeating them. What I will do however, since no one else has mentioned it, is share my top tip to do all the chopping (cabbage, onion, apple etc) in the food processor with the slicer attachment. Nice fine slices and none of the work, between that and throwing it all in the slow cooker (I don’t fry off anything first) it’s about 2 mins work for a great result!

I do it in the slow cooker: cooking apple, onion, cinnamon, ground cloves (a tiny bit so it isn't overpowering) apple cider vinegar, shredded cabbage and a knob of butter.
It is quite moist so I warm it in the oven on Christmas Day to evaporate some if the liquid.

Shred and bake, layered with onions, apples, balsamic vinegar, brown sugar, cinnamon, cloves , butter, salt and pepper. About an hour and a half/two hours, at 180, stir halfway.
