How does everyone cook their red cabbage.

Our milkman is delivering a veg box tomorrow. I have never cooked red cabbage before. Some recipes say cook in vinegar others say serve it with cooking apples.

So please can you tel me how you do yours and how long does it take?

Think we do either HFW or Delia. It has kidney beans, spices, vinegar and raisins - that sounds more like HFW? Oh I love it!

Thank you so much. I can’t believe I am in my seventh decade and have never cooked red cabbage. One of my DiLs does it and it is delicious. Sadly she has just gone down with COVID. Christmas dinner is her favourite meal so it would be beyond cruel to ask her.

Everyone refused to eat blue cabbage so will try some of the recipes above

Sauté cabbage and a red onion, add a glass red wine, slug of balsamic vinegar, couple of spoons of brown sugar, handful raisins, few cloves and a cinnamon stick, bring to boil then cover and simmer 90 mins

For those who like to add raisins you might like to try it with dried cranberries instead, can't comment on how it would taste with fresh.

Braise = to cook slowly in fat and a small amount of liquid in a closed pot

Thanks. Braised red cabbage sounds like hard work compared to a lot of other veg that boil or steam quickly with barely anything more than a sprinkle of salt.

It is very little work to get ready, it just cooks slowly. It is also completely different because it has such a rich and warming flavour.

I really would not say 'hard work'.

I braise in a slow cooker, it's not hard work, it just takes time.

Shh! So there's a huge variety of recipes out there. One year I came to the realisation that fannying about with red wine/port/varying quantities of spices... is basically mulled wine! Total game changer. So now...
1 red cabbage chopped into 4 and sliced fried in butter.
1 dessert apple grated.
Half bottle of mulled wine of choice
4 tbsp balsamic vinegar
Up to 1 tbsp sugar (this totally depends on your mulled wine, I like Adnams but it's not as sweet as many)
Boil off half of the liquid on the hob before covering it and finishing off in the oven low and slow 120°C for around and hour to hour and a half. AND you can reheat it super easy the next day. Winner! 🥳

It's really easy to do but just takes time to cook. The main attraction is that it's something you can cook in advance and in large quantities to freeze, it reheats beautifully. And it tastes delicious.

I hate that Delia braised red cabbage recipe that everyone does. Red cabbages use to languish is the veg box (love all green leafy veg). Then DH discovered roasted red cabbage and my life has been transformed. Slice finely, toss in olive oil and salt, bung in a roasting tin and cook for whatever time the tinterweb tells you. Absolutely awesome. You will thank me.

I use Delia's recipe like katcatkat and add some star anise. I usually freeze half as there's always too much for us from one cabbage. The smell as it's slow cooking in the oven is amazing.

Shredded, braised with onion, cinnamon, cloves and red wine. Near the end mix in apple slices that have been caramelized separately in butter and sugar. Best made ahead and reheated.

Is the Delia one very sour? I find some very vinegary and can't remember what recipe I've used before.
