What’s your favourite way of cooking carrots and parsnips?

Every year for Xmas dinner I make a root vegetable pie. I’m sort of bored of it now so curious to find out how others do their carrots and parsnips.

Peel both, cut down the middle, put on a tray with fry-lite, drizzle of honey and sprinkle of mixed herbs.

Roasted parsnips with honey.

Roasted carrots are lovely too but I usually steam them.

Thick batons or wedges. Drizzle with oil and salt, and roast in a hot oven, sometimes adding a sprinkle of curry powder or garam masala near the end.

Both roasted with honey and brown sugar and butter. My dad makes the best ones and they get a sort of layer of cracking brown sugar on but I don't dare ask how much he uses Grin

This is a revelation. I've only ever steamed or boiled carrots and roasted parsnips.

I steam carrots and then finish with a five minute simmer in diluted orange juice. Serve with a knob of butter.

Parsnips are par boiled then whacked into a sizzling oven pan with olive oil, cracked black pepper and runny honey. Roasted on a high heat and then moved to a shallow tray and kept warm while I finish off spuds, gravy etc. They really crisp up this way and a lot of the oil leaches out while they are 'resting' so less greasy.

Also remember to use parsnip water in gravy. It brings a subtle sweetness which really enhances the flavour.

Veg bake

Cut and small cube equal weights of Parsnip, Carrot, Turnip
Boil till just turning soft (you dont want them to turn to mush)
Rough mash with lashings of butter, sour cream and horseradish sauce. You want the veg to be a little lumpy rather than smooth.
Place in a baking dish, smother with cheese and bake till the cheese is browned.

My family love this and ask for it every year.

are they not mega, mega sweet? I find even plain roast carrots are pretty sweet.

Boil them for 5 minutes, then roasted in the oven with honey and parmesan (and a bit of pepper). Delicious!

@Classica - I would say it's not a good choice if you don't like sweet stuff! We tend to have them with more savoury things to cut through it and when you've covered them in gravy as well...
I don't find carrots too sweet but you get a thin layer of effectively butter caramel on them

Parsnips roasted.
Carrots, cooked in water + orange juice with added sugar and olive oil/butter and tarragon in the end.

Add some fresh thyme leaves as you roast them.

Loving the root veg pie above, my neighbour has brought me round a box of root veg which I need to cook. Just need to find freezer space now.

I usually do the honey roasted method as pps have said. However M&S do a seasoning pack for roast parsnips that is lovely!

My in laws are from Lancashire and it’s the norm there to do carrot and swede in little tiny pieces. You dice the veg, boil and then drain, add back to pan with a generous helping of butter, take a knife and do chopping motions until you have small chunks really nice and a bit better than just the normal mash I am used to!

Christmas dinner, roast parsnips same as roast potatoes only they don't take quite so long.
carrots - they are nice roasted, but on Christmas day I prefer them not roasted.
My Granny did them by grating carrots into a dish (not too flat) add a splash of water and a knob of butter on the top. Cover in foil and put in oven for about 45 minutes. Really lovely
