What’s your favourite way of cooking carrots and parsnips?

Every year for Xmas dinner I make a root vegetable pie. I’m sort of bored of it now so curious to find out how others do their carrots and parsnips.

Roast parsnips with a mustard and maple glaze. Yum yum.

Ends off, don't peel, lengthways into quarters. I like them rustic.
Boil for 5-10 mins til you can get a fork in the chunky end.
Dash of oil, bit of butter & a spoonful of honey in a big roasting tray. Spread in one layer.
180c, 50 mins, turn halfway through.
