What are your vegetarian/vegan meal plans?

I'm not vegan or vegetarian but I do eat a lot of vegetable based dishes and I'm looking for inspiration.

Mine so far is

M)Honey sesame Roasted brussel sprouts and crispy baked tofu with rice. I'll probably throw in some peppers and onions too.
T) Black bean and vegetable enchiladas
W) Curried bubble and squeak
THU) Pumpkin and mushroom pasta
F) Mujaddara(I've never made this before. Hopefully it'll turn out.
S) Sweetcorn fritters, fried egg,, tenderstem broccoli.and mango salsa, if I can be bothered making it.
Sun) I have a ramen kit to use up so probably vegetable ramen or possibly Toowoomba pasta.

What are you making this week?

The enchiladas are here. www.bbcgoodfood.com/recipes/chicken-and-bean-enchiladas I know it says chicken but I really like the recipe just replace the chicken with black beans, kidney beans or mixed beans. I am often guilty of using a fajita mix packet instead of the spices but it works well.

Curried bubble and squeak. www.rivercottage.net/recipes/curried-bubble-and-squeak I'm not vegan so I boil a couple of eggs, slice them and mix them through it in the last minute or two but it's still delicious without, especially if you add extra garlic and black pepper.

Pumpkin pasta www.thecheaplazyvegan.com/easy-vegan-recipes-for-lazy-people/ I always add mushrooms, usually a little onion too and a bit less garlic than she specifies. I tend to add smoked paprika too.

Sweetcorn fritters. I make my own but this recipe might work for you. Personally I prefer to add chilli flakes or fresh chopped chilli. They're good with sweet chilli sauce too but mango salsa is here. simple-veganista.com/mango-salsa/

This is one of my favourite recipes. The smoked tofu is so good in it. I tend to use smoked paprika instead of gochugaru. It works well imo.

Thanks for posting the lists, NC123 and FiveMoreMinutes1. I'm especially excited for the coconut dahl and macaroni cheese with leeks. I love leeks so I don't know why I've never thought of adding them before.

Japchae (just skip the meat, the noodles and vegetables are more than enough)

Fennel and lemon risotto

Mushroom bourguignon

Halloumi and pepper tacos with chipotle mayo

Those are some of my regular vegan/vegi dishes, googling should give you recipes!

T- LM chorizo and red pepper sausage and bean casserole with sweet potato
W- no-meat balls, mushrooms and peppers with a jerk seasoning, spicy rice and corn on the cob.
T- sausage, mash and veg
F- bean Fajitas.
S- lentil bolognese
S- roasted veg, stuffing and potatoes

We’ve got quite a boring and busy week planned…

Pasta with roast butternut squash, homemade pesto, feta and antipasti things from a jar

Kung pao sprouts and tofu with noodles or rice

Parsnip korma with rice or naan depending on what we’ve had before! Probably onion bhajis on the side

Jackets with burnt aubergine chilli from the freezer

Bought spicy bean burgers in buns with sweet potato wedges

Veggie sausages and mash

  • Indian spiced chickpeas with baked eggs and bread
  • Veggie fajitas with homemade guacamole
  • Veggie cassoulet
  • Kale and mushroom lasagne
  • Takeout of some description - probably curry
  • fFried rice with 'fridge contents'

Apricot and walnut stuffing balls with shallots, fresh sage, brown breadcrumbs and egg

Crispy sesame tofu cubes with miso dressing and stir fry veg with rice

Every day
Macaroni cheese with grilled herby beef tomatoes and steamed romanesco
Stuffed peppers
spinach and lemon dahl with brown rice
lentil and chestnut ragout
home made pizzas
pasta with roast veg and salad
Baked potatoes with home made coleslaw/cheese and beans/spiced up cottage cheese and salad
frittata and salad

This week should include: mushroom and stilton pie with carrots, brocolli and maybe roast spuds, sweet potato and sweetcorn chowder, paneer, mushroom and spinach curry, chilli and rice, enchiladas.

We aren't veggie but try to have 1 or 2 mwat free evening meals per week. Last week was tofu chilli and lime fajitas, and quite chilli with nachos. This week I'm thinking qourn cottage pie, also possibly cauliflower macaroni cheese. I also want to try butternut squash macaroni cheese one time.

We like bubb,e and squeak for a light supper, tinned potatoes then any green veg leftover eg sprouts cabbage leek, fry a,together and top with a poached egg

Just to balance all these lovely recipes... a 'I hate cooking and have no interest in it' veggie...
Jacket spuds with cheese and coleslaw/spinach
Pasta with mushrooms, courgettes, onions and sweetcorn (garlic and toms sauce)
Quorn curry with onions, mushrooms, random veg (sprouts are surprisingly good) and any old rice.
Veggie pizza with spinach, sweetcorn, and extra veg on top
Vegan Beefless wellington as a roast.(Asda's own and surprisingly nice)
Quorn stir fry with noodles, bamboo shoots and water chestnuts, peppers, onion, spinache and a sweet and sour or black bean sauce.

All easy and very quick for busy veggies!

@StillMedusa - how nice is that vegan Wellington you mention? Is it nice enough to serve on Christmas Day? DS is veggie and loved a Waitrose Wellington but they've stopped making it and I need to find a replacement.

I made a greens pie last night that we had for dinner but I'll be having for lunch all
Week.
Based on the flavours of spanakopita but made with half the fridge: leeks, kale, Savoy cabbage, onion, spinach, parsley, feta, lemon and egg. I used shortcrust instead of filo.

Hivemindneeded I was actually really impressed with it! I'm not really bothered about meat substitutes but tried it to see if the non veggies would accept it and they both agreed it was nice. As far as I can recall the taste of beef it was very acceptable substitute. The only thing I did find it it says cook for 35 mins and it needed a fair bit longer for the pastry.
It's on my Xmas day list (most of my family are veggie) along with Quorn Roast and I'm going to test Aldi's veggie roast and their 'no pigs in blankets' Grin

OP, just be aware that Ottolenghi is a big liar about the amount of time the crispy onions take. Also, I find that the flouring of the onions isn't necessary (and if your onions are at all watery then you just end up with doughy bits).

Some of these - eg lentils and chestnuts, the green pie - sound really lovely. And baked potatoes, beans and coleslaw are always comforting and sustaining. But - perhaps I'm alone - I find fake meat things (especially Quorn) horrendous. I've been a vegetarian for 30 years and more, because I like vegetables (and for other reasons, of course). But the not liking meat is quite important. I don't like real meat, so why should I like the fake stuff?

Fake meats are very, very highly processed. Not natural at all.
