Nicest curry for beef?

Planning for day after boxing day. I have a huge joint of beef that's going to be far too big and didn't think to cut in half b4 freezing.
So ill have to cook it all which I plan to do boxing day reality is well prob use less than half. So the other half I'll do a curry. I've only ever done chicken curry or veg curry as its all the dcs eat. But the dcs are at pils that day so it's just us and can freeze some if needed

We don't like anything too spicy. We normally have massala, korma, passanda, we like a rogan josh but dh finds a bit too spicy

If you're roasting the whole joint then planning to use the cooked beef in a curry then I don't think most traditional recipes will work very well as you need the long slow cooking to get the richness and to tenderise the meat.

I did a Thai red curry beef last week and it was delicious with brown rice. I used the Thai Kitchen red curry paste and a few extras like garlic, ginger, lemongrass, fish sauce. Red peppers and mushrooms, plus snow peas.

Agreed. I've also made it very successfully with roast beef leftovers - essentially though your beef is already cooked, you want the "fall apart" slow cooked richness in rendang which means the beef benefits from a second cooking.

As it's a coconut milk based curry it is rich and creamy and you can make it as hot (or not) as you like.

I love hot food but I actually dial it down in rendang because you really want to appreciate the other flavours/spices.

You can also make the spice paste in advance so it's much quicker when you want to eat.

Yes to beef rendang. I've made it a few times. Very easy and always tasty. Needs a long time to cook though.

You can usually dial down the spice a bit by adding more cream/coconut milk or coconut cream/plain Greek yoghurt. Additional yoghurt or cream can also be stirred in at the table if you don’t want to adjust the whole batch you have made.

Thank you will look at all suggestions. I don't have to roast it all. I can cut one defrosted. I just meant I should have portioned b4 freezing.

Another vote for Massaman. Absolutely delicious and my favourite curry. I cheat and use a good quality paste from my local Chinese supermarket.

Rendang is amazing but the long slow cooking might ruin the meat if it's already cooked.

Not what you asked but I'd be going for fancy sandwiches with slow cooked onions, mustard, horseradish, watercress or similar. Or reheating and putting in a huge Yorkshire pud.
