Nicest curry for beef?

Planning for day after boxing day. I have a huge joint of beef that's going to be far too big and didn't think to cut in half b4 freezing.
So ill have to cook it all which I plan to do boxing day reality is well prob use less than half. So the other half I'll do a curry. I've only ever done chicken curry or veg curry as its all the dcs eat. But the dcs are at pils that day so it's just us and can freeze some if needed

We don't like anything too spicy. We normally have massala, korma, passanda, we like a rogan josh but dh finds a bit too spicy

OP, if you're going to be using up something already cooked, I agree that rendang is a no-no, you want to slow cook something fatty for that.

If you really want curry, slicing super thinly then putting into a red/green Thai curry to warm for a moment at the end would be OK. There are some nice Thai salads with beef too.

@thickthighs73 I don't get what your friends have to do with it. Millions of English people are vegetarians, what's your point? Obviously, I wouldn't bang on about beef curries to Hindu friends because that would be very rude, but Christian Indians for example traditionally make curries with beef. And there are a lot of them, and they are Indians too. Are you denying they exist??

Another +1 for Massaman or Rendang. We regularly have both. If heat is an issue maybe consider doing stroganoff rather than a traditional curry as that’s more creamy.

Bhuna is a rich but mild Indian curry perfect for beef, you don't get it too often in restaurants. A bhuna sauce is perfect for beef or game because the flavour improves after a long slow cook on low heat. I often start it on the hob and then transfer it to a slow cooker to finish off.

It's a 'home curry' so it's often cooked at home for special occasions rather than in a commercial kitchen. One tip when using the recipe above is to brown the meat with the spice base & not separately as instructed. This helps to lock and seal the spice flavours into the meat.
