Best Christmas vegetarian main?

One family member is veggie, rest of us eat meat. Does anyone have any recipes/ideas for an easy(ish) thing to make for one? Don't mind having some leftovers. A shop-bought nut roast, for example, would be great if it's really good. But also happy to cook.
Any ideas much appreciated :)

It’s tricky because veggies often have quite different tastes. I would ask your vegetarian what they like.

The bosh nut roast recipe is a good one. I’ve made that a few times.

Thanks @PurpleDaisies - I know they're not mad on mushrooms, but otherwise fairly open minded. Will check out bosh recipe :)

I love a good nut roast myself! People say it's boring but most people have turkey every year so I don't mind!

Rose Eliot's white nut roast recipe is good, though I use mixed nuts instead of just cashews and whatever bread we have for breadcrumbs and use sage as the herb for the stuffing rather than parsley at Christmas. I have the recipe and put in a smaller loaf tin as it's too big for the family. Still a bit left over to have cold with chutneys.

I serve it with a mushroom gravy.

I'm not keen on anything in pastry myself as it doesn't agree with me (especially puff pastry for some reason) but have made filo wrapped fillings eg mushroom and chestnut in the past.

I made a roast vegetable terrine with hummus once, bit summery for Christmas but delicious. Maybe the hummus could be substituted with pate or nuts..?

Dsis is a vegetarian and always requests a Linda McCartney pie! I’ve suggested making something a bit fancier but she prefers the pie. We make sure that all the trimmings are veggie and we separate roast potatoes for her which are not cooked in goose fat like the spuds for everyone else.

I’ve had veggie sausages in place of meat on Christmas dinner before. Richmond/shroom dogs are my favourite

MacSween veggie haggis is excellent

Lidl do some surprisingly nice Christmas veggie tarts.

I make a chestnut & cranberry stuffing as have that as my ‘main’.
Bosh do some nice mushroom parcel things with filo pastry which look good

A quiet roast (used to get from Iceland tho it's been a few years since I lived in the Uk) was my perfect alternative. Doesn't look brilliant on the table unless you slice and sprinkle something on it before serving (pomegranate looks great), but tastes yum and goes with all the trimmings

I always make a Christmas pie. Chestnuts, chestnut mushrooms (but you could substitute something else for those), leeks, and finely chopped celery, all in a blue cheese sauce, topped with puff pastry. It’s delicious!

Alternatively, these Artisan Grains shop bought but roasts a very good. They are dehydrated a d yiu nix the. You with water, like stuffing.

If it was just for one person though, I'd either do a big stuffed mushroom or buy a pie. It something I've done just for myself in the last is to mix Paxo with some fried mushrooms and onions plus a few nuts and top with a bit of smoked cheese then baked as normal.

I always buy a Cook nut roast - did before we had vegetarians. It's not vegan though if that's important.

I made this last weekend and it was great, didn't bother with the tomato sauce and just had vegetarian gravy with it. I made it ahead of time and just reheated in microwave. Looked quite festive also

I'd ask. As someone who always hosts and is a veggie I've gotten to the time in life where I just can't be arsed with a veggie main. As long as there are roasties, stuffing I can eat, cauliflower cheese and gravy I'm good.

I’ve done posh, festive Paxo, mixed up with a packet of mixed nuts and a jar of cranberry sauce (reduce water in paxo accordingly). Works well, takes 2 mins to make.

DD always has a cauliflower cheese grill. Nothing will persuade her against it. I normally make a nut roast for me and am eating it for days!

The OJ in the Munro recipe puts me off ... It just sounds a bit Letitia Cropley. Can anyone who has made it comment on what it tastes like and why the OJ might be included?

Good Life nut burgers (like single-portion nut roasts). Or customise the nut roast recipe on the vegan society site (nut roast works as stuffing for non-veggies too).

i was eyeing up the frozen veggie options in Lidl yesterday, will probably have one of those for myself.

(eg lentil red pepper and almond, comes with its own gravy)
