I’m going to go vegetarian for a week as a test

What do you enjoy eating? I think it’s compulsory for this chilli recipe to be shared on any veggie thread. Batch cook and freeze in portions. It takes a while but it very low maintenance…

We eat 99% veggie here, very occasional fish which I keep saying I’m going to drop too.

We’re having creamy leek pasta tomorrow -
from the what mummy makes recipe books but here is a similar bit slightly more grown up version hungryhealthyhappy.com/creamy-leek-pasta/

Roast veg - whatever your favourites are, stir through pasta with feta cheese crumbled on top.

Spinach and chickpea curry or one with paneer - tons of recipes out there but for a really easy version I use frozen chopped onions, one of those little paste pots and a tin of coconut milk.

Shop bought falafel (I like cauldron), pitta breads, hummus and bag of salad. You can make your own hummus if you’re into that, I sometimes do (or make it with butter beans which is nice too) and you can make good flatbreads with 300g self raising flour 300g greek yoghurt, pinch salt and bit of baking powder. Roll out as thin as you can get them and do in a dry griddle pan.

Omelettes, quiches and frittatas all work well veggie.

Aldi do nice beetroot burgers, plus butternut squash versions I think.

Thank you - I love peppers and mushroom, chilli and garlic too.

I would like low fat where possible.

No, probably not long term, as I normally live with a family of debited meat lovers.

However, I am self catering for a week on my own and thought it worth a try.

Perhaps longer term you could look at a few meat free days a week, or look at replacing some of the meat in your dishes with veg. It doesn’t have to be all or nothing.

Fajitas with pepper and mushroom are great. I add either homemade or bought regrows beans, avocado, salsa, cheese and sour cream.

There are loads of great recipes on this site. The sweet potato and black bean veg burgers are gorgeous.

I don't have recipes as I seldom follow them.

I recommend:

  • mushroom risotto,
  • veggie lasagne,
  • eggy bread/French toast, roasted butternut squash as a side dish then leftovers pureed into a soup with carrots, garlic & onions,
  • cooked & pureed peas, asparagus, broccoli, onion for a soup
  • any good beef stew recipe, just replace beef with some butter beans or haricot beans
  • tuna, sweetcorn, grated cucumbers & mayo mix stuffed in pitta bread

I tried Quorn sausages ages ago and they were ok. don't know if recipe has changed since, worth a try?

400ml of oil!!

The beauty about veg is that so little oil required
Often… I don’t use at all. Especially if throwing veg in to slow cooker

I'm a veggie of 30+ years, if I had to put my ideal week of meals together I would go for:

Paneer curry
Chilli - Jamie Oliver does a good one
Enchiladas
Pizza
Pasta arribiatta
Veggie burger
Spinach and ricotta cannelloni

Not a carb monster at all

I am a long term veggie living with devoted meat eaters, its not that hard really. We have two or three veggie dinners a week, the rest of the time it's easy enough to make a veggie version of curry for example and cook chicken on the side in sauce to add in.

Porotos Granados is one of our favourites

I've been a veggie for nearly 30 years.
I go through phases of cuisine and will cook that for a while and then move on to the next one.
This years phases have included
Mexican
Caribbean
Ethiopian
Georgian - a particular favourite is fried aubergine with walnut garlic filling.

I keep reverting to Middle Eastern veggie cooking because it is so easy, often effective and often quick to do, really tasty and it's easy to make for 1 or make family portions and freeze or fridge.

I totally agree about Middle Eastern cooking being brilliant for veggies. So much interesting taste and variety.
