I’m going to go vegetarian for a week as a test

It will be too much for one person but if you set half the salad aside before adding rocket and feta it can be blitzed to a soup for lunch later in the week.

I’m actually officially starting next week, however, I am half doing it this week and quite enjoying the novelty.

I made a delicious mushroom stroganoff one night, and then a prawn and avocado salad the next.

Lunch was nuts and berries each day.

So we are mostly vegetarian (I occasionally eat fish). But we are Indian so frankly we eat Indian food 3/7 days of the week.
Last week I made dal with spinach, paneer, green beans with dessicated coconut, grated carrot with mustard seeds and lime juice, potato curry (aloor dom to be precise), aubergine (baingan bharta), a lightly spiced mushroom thing that is actually good with bread for lunch, rajma (kidney beans) and chhole (chickpeas), cabbage and cauliflower.
So that was essentially a whole week’s worth of Indian food. But I froze half of it for when things get busy.
Madhur Jaffrey’s recipes are always solid and authentic.

In addition to Indian food we eat Mexican a lot (we also live in the US), Thai, Chinese (fried rice and stir fry are Friday go tos) and Middle Eastern food for which I use the Ottolenghi books.

I have been in the position of being the veggie cook in a family if meat eaters .

There are some foods such as a spicy veggie pasta which nobody would notice didn't have meat in. Then you can do things like macaroni cheese, pasta primavera or risotto and add chopped ham to the meals of those wanting meat . I also did quick food such as burgers, sausages, pizza or a pie where it's easy to keep meat and meat-free versions in your freezer .
I'm not keen on cooking meat whereby there's too much handling or frying up and getting a smell but I'm quite happy to chuck ready chopped beef or chicken in a slow cooker and make a casserole . And while that's cooking can do something different for myself .

I don't understand why you have chosen to have nuts and berries for your lunch though - surely that's more of a snack? Scrambled eggs,
beans on toast, cheese and pickle sandwich, hummus and falafel wraps - all easy lunches . Or soup, so many different veggie soups . All things people would eat without considering they are vegetarian so I'm sure you could also feed to your family .

Our favourite veggie meals:

Creamy lemony mushroom pasta
Butternut squash lasagne
Stuffed peppers with rice and pine nuts and cheese
Roasted teriyaki squash and tofu with sesame seeds
Cauliflower cheese (or do half/half macaroni and cauliflower)
Fresh tomato/sweetcorn/ricotta pasta with fresh basil (one for the summer when the veg is in season)
Pea and feta fritters
Latkes made with courgette and potato and onion
Good old dhal, pickles, paratha - or you can do chickpeas instead
Warm chickpea and roast butternut squash and tahini

Monday Rogan Bosh ,(Bosh)
Tuesday stovetop lasagne (thug kitchen)
Wednesday past piselli ( thug kitchen)
Thursday sticky vietnamese tofu ( thug kitchen)
Friday one tray pasanda ( bosh)
Saturday tex mex enchiladas( thug party)
All vegan

I’m 42 years a veggie! Curry’s are your friend, you can put any kind of veg in and usually tastes great or just red lentils for a Dahl. Also like pea and mint risotto, quesadillas with a veggie chilli filling and roasted cauliflower/broccoli as a wee snack. Try and get hold of a copy of The Green Roasting Tin. I've been vegetarian (and sometimes vegan) for over 30 years now and this is the loveliest cookery book imo. I've done loads of the recipes from it many times. Recommended.

We're not vegetarian as a family but some some things that always go down well are:

Halloumi fajitas
Saag paneer (or any other veggie curry with paneer!)
Mixed bean chilli
Paneer tikka wraps with lots of peppers and onions

More simply, omelettes or frittata make a nice lunch or light tea.

When you're back cooking with the family again, if they're resistant to vegetarian food would "meat light" work? One of our household favourites is spicy chorizo rice - a small amount of chorizo goes a long way in flavour.

A little update - my veggie week hasn’t started yet, but I’ve been trying it a little. Last night I had meat for the first time in five days, and felt incredibly bloated.

Co-incidence? Or was my digestive system rebelling against meat?
