Lasagna - How do I layer?

So making a 2 layer and Im not sure how to start! Do I layer..

  1. Pasta sheets (using dried)
  2. Mince
  3. White sauce
repeat

So last layer is mince then sprinkle cheese

or other way around!!!!

As Mary Berry says : make sure your ragu is a bit saucy so the pasta has something to cook with 😀

I do mince, pasta, mince, pasta, white sauce with cheese on top. I use dried lasagne so make my sauces a bit runnier and cook for 30 mins at 180 to make sure the pasta is cooked. That's why I later with cheese sauce just on top as it's a bit runnier and drips into the mince too much otherwise.

If you aren't using fresh pasta sheets best to pre boil them but be careful they don't stick together. The top is pasta, white sauce, cheese.
Or cover with foil for the first 20minutes or so. It will help the pasta sheets to soften. Just uncover it for 15 minutes before the end of cooking so that the cheese does it thing.

So the last layer is pasta sheets with white sauce and cheese??? My pasta sheets are dried so rock hard Smile
I use fresh pasta sheets they're much better and cook much better but if you have dried ones try boiling them 2 at a time in a large frying pan perhaps?

I must be a bit strange as I've always just done layers of mince and pasta with sauce and cheese on top.

I put a little bechemel in the bottom of the greased dish so that the pasta doesn't stick, and then start with a layer of pasta, as I find it stays together best if I do this.

I then go ragu, light layer of bechemel, pasta, and repeat until I'm nearly at the top. On the final layer of pasta, I then put a thick layer of bechemel and then put some parmesan on the top.

And no! I wouldn't be using raw mince! It's been long and slow cooked into a ragu first!

This is exactly what I do. Works fine with dried pasta sheets.

I mean, you can. But not if you want to make proper lasagne.

I've make a great version using clearspring soy mince.

I rehydrate, then long slow cook it like regular mince etc. Then leave it a day.

Honestly is hard to tell difference between it and a meat one.

Had it only tonight too. I have to remind myself of the layering order ever time!

There should only be one white sauce level at the top and even then I would go with cheese sauce.

I shall be making a puy lentil lasagne. Our friends don't eat red meat, and I think a ragu made with puy lentils will be nicer than with turkey mince (I'm not a fan of turkey)

And throw away all the flavour - that is held in the fat?

Weirdly, I was going to ask something along these lines as I saw this on a Tesco lasagne sheet packet... I always always do meat, sheet, cheese sauce, meat, sheet, cheese sauce, cheese.

But the packet says:
"In a greased ovenproof dish place a thin layer of your choice of sauce and then arrange a layer of lasagne strips on top. Alternate layers of the sauce and lasagne strips covering the last layer with a white sauce. Sprinkle with cheese and place in the oven for 35-40 minutes until brown."

So you hardly get any white sauce!?

How much meat and sauce are people making? I use 500g of mince and 1 pint of milk in my white sauce and don’t manage any layers 🙈
