Lasagna - How do I layer?

So making a 2 layer and Im not sure how to start! Do I layer..

  1. Pasta sheets (using dried)
  2. Mince
  3. White sauce
repeat

So last layer is mince then sprinkle cheese

or other way around!!!!

Last layer shouldn't have meat in it, just white sauce and cheese.

I usually do meat, pasta, meat, pasta, white sauce, cheese.

Don't do it with raw mince, it would be chewy and not browned.

Lots of pasta Grin I also use dried pasta sheets but make sure there's a little extra liquid in my mince mix so it doesn't dry out as it cooks.

I wet the bottom of the dish with a mix of meat sauce and bechamel then pasta and the sauce mix till I run out.
I too last layer of pasta with bechamel and cheese but on the advert here (Italy) for Barilla lasagne sheets, and on the box, the top layer is meat sauce and grated cheese. My (Italian) SIL does that too I've noticed.

Definitely no need to cook lasagne beforehand. The most popular brands these days (As above, Barilla, De Cecco etc) all say 20 minutes in the oven but I like mine hotter and crispier on top.
In this region of Italy we also put mozzarella in each layer which helps it stand up as a slice better. (a UK Mumsnetter told me I was ruining an Italian dish doing that. Then I told her where I was) Grin

Wrt how many layers- I think it's down to taste and if you want a runny lasagne or a slice. I used to do runny, so with fewer layers, and was gobsmacked the first time I watched dp (chef) do one. It was the same tin that I'd used with 3 layers and he did about 8!

2 is purely bad taste! 3 is the minimum acceptable number of layers. I always go for 7. 8 sounds wonderful.

I do more layers because I like my slice to stand up, and I do use mozzarella on the meat layers too with a smear of the béchamel because that's what my nonna did.

If I hadn't just made a batch of pasta al forno with aubergine for the freezer I'd be layering away after this thread.

You need the meat sauce in the bottom of the dish, then pasta, then white sauce, pasta, meat, pasta, finish with a layer of the white sauce and cheese topping.

A really good lasagne is made with a ragu that has been slow cooked for several hours.

Using raw mince in lasagne would give a horrible result IMO.

Have I just read that some posters do mince, white sauce then pasta? If you are using dried pasta then won't it be rock hard in places?

And ugh at raw mince. It needs to be browned first and drained of the fat before adding ingredients.

I don't make a cheese sauce - I use a mixture of ricotta and mozzarella.

Nope, not at all! My lasagne is definitely not dry. But then I make it with a tomatoey bolognaise, so that probably helps.

I don't have room in my lasagna dish for as many layers as folk are recommending! I normally do 3 layers of pasta in total.

I once did pasta while sauce pasta by mistake & it was disgustingly stodgy.
I do Ragu, white sauce, pasta, repeat. I struggle to do it more than twice even when I try to!

I put pasta on the bottom, it slices better that way. So:
