If I have a pack of chicken thighs....

... what's something new I can do with them?

I usually make mini-roasts, or coat them in a teriyaki sauce. :)

Love some top tips!

Only specifications is that one DS has sensory issues around food so we need to go easy on the spice.

Very grateful for any thoughts!

A baked rice dish? You can add chicken stock to cook the rice, some cumin and a few sultanas?
Or paella/arroz al horno type of thing. No spice required!

Olive oil, salt, pepper, garlic, a few lemon slices.
Brown the chicken in a little olive oil - leave the skin on, just trim it a bit, you get a better flavour. turn the heat down, chuck in the garlic, lemon and seasoning. Cover it tightly and let it cook gently for at least 40 minutes.
It is good with rice and a green vegetable.

I only use Thai rice, IMO the best with this dish.

Do they have bones?

If they don't then

  1. get some garlic, butter and ready rolled puff pastry

lay out the pastry, put the chicken on one side, smother with butter and finely chopped garlic

put the other side of the pastry over and seal - bake for 20-30 mins.

Get a slow cooker, some crème fraiche and Campbells condensed mushroom soup - you can add sweet corn or mushrooms

Put everything in the slow cooker and leave for 5 hours.

I have 2 low cookers, I do this in the small one with one tub of CF and one tin of soup, you might need to round up for a bigger SC

  1. put the chicken between sheets of cling film and batter with a rolling pin so they are all an even thickness (this is a great recip for if you are pissed off)

Make a stuffing, roll the chicken round the stuffing, secure with cocktail sticks and bake.

Stuffings can be - sage and onion from a packet, mozzarella and cranberry sauce, cheese and onion (cook the onion first) mushrooms and garlic or have a look in the fridge for what need using up.

You can also cover the chicken with pancetta or bacon

If there are bones in

Make a marinade of:

Honey, orange (or lemon) juice, salt and pepper and spices of choice, marinade overnight then bake in the oven - this works well with chicken wings and on a BBQ too.

Oh I had assumed they were skinless, if they have skins get a roasting tin, put the chicken in and sprinkle with lemon juice and black pepper, you get a lovely crisp skin and slight lemon taste tot he chicken.

Cover in flour and fry off to brown the outside, so it becomes crispy fried chicken.
Serve with rice and frozen peas or mini roast potatoes (with garlic if you like) and veg of your choice.

Chicken a la king.

If they are thighs with bones, boil them up first with a bay leaf and onion in the water. Then strip the meat off when they are cool and use that stock for the a la king creamy sauce.

With the skin off and bones out (it is not difficult - slip the skin off, flip over, cut along both sides of the bone, roll the meat to one side of the bone and cut along the third "side" and the ends of the bone)

Another vote for the Hairy Bikers chicken, but agree the smoked paprika may add too much spice. However I have done it without, and it still tasted good. Might work for you if the chorizo is not a highly spiced one? It’s a very good recipe to know.

This Mary Berry recipe is very good indeed. It sounds a bit fiddly but once you’ve done it, it really is easy. I’ve sometimes done it just stuffing the thighs with sausage meat, missing out the lemon and olives. Works fine for a simpler supper.

Oh these all sound incredible! I have definitely gotten into a rut with my cooking. Loving the idea of stuffing it with sausage meat. And the chicken a l King.

I used to cook chicken with cream of mushroom soup alot, and it was always a massive hit. I had forgotten all about that!

Thank you everyone. I am writing a list and as chicken is the favourite for all of us I can see some great meals coming up!

There's a lovely and simple Jamie Oliver recipe - Tender chicken with sweet tomatoes.

You put the seasoned chicken legs in a baking tray with a bulb of garlic cloves (split up), and a load of baby tomatoes and basil, with olive oil over the top. Takes 2 mins to check together and bake. Super nice. The garlic isn't overwhelming as it sweetens whilst you roast it.

Oh the chicken cooked in soup, I eat half and put the other half in a foil pie tin, add pastry and freeze for another meal.

Dip in egg, then in fine, seasoned breadcrumbs, then egg again, then finely grated parmesan. Bake in the oven however long you usually would. They go all crispy and delicious.

Do you have a slow cooker? Taming Twins on Instagram has some lovely chicken thigh recipes. The honey and garlic one and chicken and bacon one are real favourites in this house 👍🏼 You could do them low and slow in the oven if you don't have a slow cooker.
