Veggie meal ideas

My husband and I are trying to reduce our meat in take and are going veggie all next week to see how we get on.

I'm after lunch ideas mainly as I can alter almost all the things we have for tea to be veggie but struggling for none meat lunches.

Go & look at the recipie section of the Riverford organic farms website.
It's stacked full of seasonal recipies a lot of which are vegetarian & a fair few of them look really tasty to me even though I like meat & fish far too much to give it up any time soon.

If you look in the quick section there are a lot of vegetarian meals with a prep time of less than 30 minutes.

I signed up to get their veg box delivered this weekend so I've only just found them but we are planning on Spiced Squash and Lentil Broth with warm pittas for lunch tomorrow after a quick browse.

Do you normally eat your main meal of the day at lunch time?

For me, a normal lunch is either a sandwich or soup or a salad and my mind is boggling at the concept of needing "ideas" for meat free versions of any of those because the normal range of possibilities for those kinds of things include loads of meat free options. But if you are meaning recipes for main meals, because you normally just have snacky light suppers, then obviously that's a totally different question.

Past and cheese or tomato sauces.

Peppers, mushrooms, new potatoes oil and herbs and spices - I like salt and pepper, chilli and cumin.

Mix the oil and spices, add the veg and coat in the seasoned oil, put on a baking sheet for 20 mins in a hot oven (if you are having a meat day add chicken goujons).

Sandwiches, baked potatoes, wraps, salads.

Lots of things you can do with eggs.

The idea of a 'main meal of the day' or different foods for lunch or dinner is mind boggling to me because I almost never eat sandwiches and the foods and meal size I have for lunch or dinner is usually the same.

I'm also wondering what the OP means by 'I can alter almost all the things we have for tea to be veggie' because it's usually easier and more successful if you choose naturally vegetarian meals rather than starting from a meat meal and looking to substitute the meat.

I've got into keeping falafels in the freezer recently. A few of them, with some salad and houmous, maybe with a pitta, is a tasty lunch.

Soup is another favourite. We often have leftovers from the night before.

Another fave is toastie sandwiches with vegan cheese and maybe some pickle or chopped onion.

Or, how about a jacket potato?

I wasn't meaning to be rude, but it would be quite patronising of me to post more details of what I normally eat for my simple vegetarian lunches if what you are after is proper cooking recipes which I would normally do in the evenings (for which I also have plenty of ideas)

I often have something on toast for lunch, things like garlic mushrooms, caponata, avocado, mixed beans, ratatouille and of course eggs or cheese.

You can make really nice chillis, curries and stews just using vegetables and pulses. Also tons of soup recipes out there which is really nice for lunch with a roll.

You can also make fajitas but use halloumi instead of chicken. Also use tofu and make stir fries.

The other important detail is where this food is going to be prepared and eaten.

Lots of food is dependent on what time and cooking/heating facilities you have when you're eating it. Are you at home, at work but have a microwave, or out and about so it needs to be something you can eat cold?

If you are having an experimental week, you might be better to skip the vegan cheese and use normal for now in my opinion as it's an acquired taste and might put you off. Lots of people are mainly veggie but not in the 100 percent pure form involving nothing at all from an animal

Lunches for work I have things like wraps, soup and leftover curry, chillies, pasta. If you feel you must replace the meat then look at Quorn products or tofu. I rarely use either as not a fan. Beans, yoghurt, veg and cheese would be my go to for protein

For lunches one of us works from home and the other goes out. Ideally I would like ideas that could be eaten cold for ease but also fancy trying new veggie ideas that I wouldn't usually eat as most meals contain meat.

I not stuck on replacing meat with Quorn etc but no idea about making spag bol/ chilli meals without a substitute. I really enjoy cooking and willing to give anything a go :-)

We're a vegetarian & vegan household & we regularly have:

Sandwiches/bagels/wraps - cheese & pickle, egg mayo, salad, mushroom pate, soft cheese & tomato.

Cheese on toast
Fried egg sandwich
Beans on toast

Soup with a roll. Lentil & onion soup is my favourite, kids like tomato.

Crackers & cheese or marmite.

Vegan sausage rolls/cheese & onion.

Leftovers.

I’m currently making this for our dinner as it’s a very warm day here. I’d say it would work well cold out of the fridge for lunch.

Have a look at the green roasting tin cookbook. Lots of fab ideas in there - giant cous cous with roasted mushrooms and feta is one of our favourites. (That might be in the yellow one though which also has some good veggie recipes in it.) You can have lots of the ideas cold for lunch.
BBC good food also has some good recipes. Tricolour cous cous salad, summer courgette ribbon salad and chargrilled vegetable and bulgar wheat are all lovely.

Plus puff pastry tarts, spread the puff pastry with something like pesto, or creme fraiche. Top with any veg, any cheese or something like balsamic onions and put in the onions. Hot or cold.

Another quiche idea is cheese and broccoli - my meat-loving DH has happily eaten this for the past two days :) Gruyere cheese and a crushed garlic clove in the egg mix works well.

Minestrone sup can be a great lunch - lots of chopped carrots, onions and courgettes in mine, together with tinned tomatoes, basil, black pepper, soup pasta and loads of grated cheese (veggie Parmesan if you can find it) on top. Garlic bread on the side makes a substantial meal.

Don't overlook the simple things like egg mayonnaise sandwiches, with cress for crunch, or poached eggs on toast, or beans ditto.

We're trying to cut down on meat too - makes it more special when we do have it - but I don't like veggie versions of meat, so eggs, cheese, legumes and vegetables are what we're mostly eating.
