Veggie meal ideas

My husband and I are trying to reduce our meat in take and are going veggie all next week to see how we get on.

I'm after lunch ideas mainly as I can alter almost all the things we have for tea to be veggie but struggling for none meat lunches.

I typically batch cook something for 3 work-week meals and do dinner leftovers for the other two.

Bean chilli, caponata or ratatouille on toast or a jacket potato topped with some cheese is nice.

That viral TikTok feta pasta is delicious and very easy to make ahead for lunches. I like to add kale for some greens.

Black bean and roasted sweet potato burrito bowls.

Chickpea and roasted sweet potato curry and rice.

Soup and a sandwich or salad.

Sometimes I make a big sheet pan pizza (mushroom is my favourite) and have that with a side salad. If you don't want to make the dough, naan or pitas can be a good base.

I love variations on the Buddha Bowl salad thing. You can make it out of almost anything but falafels are filling and handy.

Basically grated carrot, some leafy salad, some cooked veg like roasted sweet potato or broccoli, and something sort of substantial like falafel or halloumi or I've even done Glamorgan sausages ( breadcrumbs, mustard, cheese, onion ...bind with egg...coat in dry breadcrumbs and shallow fry).

Basically grated carrot, some leafy salad, some cooked veg like roasted sweet potato or broccoli, and something sort of substantial like falafel or halloumi or I've even done Glamorgan sausages ( breadcrumbs, mustard, cheese, onion ...bind with egg...coat in dry breadcrumbs and shallow fry).

Oh and if you have red cabbage, looks super pretty with the greens and carrot. You're supposed to top with sauce of peanut type or yogurt or oil dressing etc.

Burnt aubergine chilli.
Cauliflower Kung po, egg fried rice.
Cauliflower shawarma.
Mixed bean enchiladas.
Butternut squash, mushroom and spinach lasagne.
Gnocchi bake with slow roasted tomatoes and kale with mozzarella.
Daal (so many options). My fave is with coconut milk and a side of Bombay potatoes.
Shakshuka, bulk out with chickpeas.
I love ready made spicy bean burgers, all the freezer sections have them. With chipotle mayo and salsa in a bun.

I still eat chicken and fish and the odd brisket but I don't really need meat for a tasty meal.

For lunches one of us works from home and the other goes out. Ideally I would like ideas that could be eaten cold for ease but also fancy trying new veggie ideas that I wouldn't usually eat as most meals contain meat.

I not stuck on replacing meat with Quorn etc but no idea about making spag bol/ chilli meals without a substitute. I really enjoy cooking and willing to give anything a go :-)

Lentils, roasted veg and sweet potatoes are great alternatives for meat substitutes. Roasting things makes them so much more tastier.

falafals are amazing. In wraps, in couscous salad. And to replace meatballs in spagetti. Wraps are super easy to make for a lunch to take out or eat in, falafals, humous, couscous is instantly ready, a few bits of peppers or sucumbers, lettuce, vegan cheese, maybe salsa, they are fab for super ease and delicous.
also Spanish tapas, like potato bravas and tortilla.
Oh no theres too many things to mention, just go wild on the vegan/veggie section of the shop!

Bolonaise without bothering with a meat subsitute is awesome:
lentils boiled up abit first, then add to already cooking, finely chopped onion and super finely chopped mushrooms, add your veggie stock, a little basil, salt/pepper whatever, then chopped tomatos, red pepper chopped if you like it, add fresh spinach, tomato puree, maybe a dash of sugar to bring out the flavour, simmer simmer simmer,
spagetti seperate, add vegan cheese sprinkle to serve, delicous, the mushrooms & lentils make the 'meat'. Sooo much heathier.

Oh yes buddha bowl agree thats awesome too, you can put all kinds of delicous in together, sprinkle chopped red onion or spring onions or fresh corriander/parsley on the top of anything you love in a salady way delicous!

We wanted to expand our veggie repertoire last year and found Hello Fresh was a good way of doing that.

We do folded pie sometimes... unroll a big sheet of puff pastry, put thinly sliced potato, finely sliced onion and grated cheese with black pepper along one half, fold over and crimp edges, egg wash it, bake for 45 min at 180. Makes 6 "slices" which are nice hot or cold. Can be done with roasted peppers, courgette, aubergine, sweet potato, pumpkin, broccoli, mushrooms... any combination with a bit of cheese...

God some of these replies are depressing. No wonder no one wants to be veggie!!

I love eggs for breakfast but overnights oats are great too, with loads of fruit

We eat veggie fajitas, currys (sometimes with quorn but it doesn’t suit everyone) but potatoes work well too. Homemade soup, lasagne, casserole

Go on BBC good food, good recipes there. I love the courgette lasagne, root veg casserole, coconut and squash dhansak, Satay sweet potato curry!! So many options
