What am I doing wrong . I read that you you should add some salt and white wine vinegar and stir the water so its like a twister then add the eggs.

The first picture is without salt and white wine vinegar the 2nd picture is with.

Inch and a half of gently simmering water in a shallow pan, crack egg in, clamp on lid - this cooks top of egg without having to 'splash' with water.

Used to run a B&B and remember a guest asking for poached eggs and telling me a previous B&B refused to do them because of the stress involved Grin

Also what is the difference for American eggs? I do keep mine in the fridge but I buy pasture raised organic eggs

American federal whatever requires eggs to be “sanitised”- washed in chlorine or sometimes soap and water to remove surface bacteria. This destroys the protective cuticle on the eggshell which is an effective barrier against bacteria and other pathogens actually getting inside the egg. Therefore once washed they have to be refrigerated as there is a risk of contamination.

EU/british law is the opposite, concluding that washing eggs actually increases the risk of comtamination. So eggs cannot be washed to preserve the egg cuticle. They then don’t need refrigerating, and guidelines advise against as when they are moved to room temp condensation on the egg surface provides moisture for bacterial growth.

So if you haven’t washed your eggs, they shouldn’t be refrigerated :)

I use a big slotted spoon and rest it in simmering water. Break egg into spoon gently. They come out perfect every time.

Microwaved poached eggs - each egg in about 1" of water in a teacup, cover lightly with a piece of kitchen towel and zap for one minute, one at a time.

It can be a bit hit and miss, sometimes 1 minute is enough, sometimes needs 10 seconds more. These were 1 minute each but one was a bit over-cooked. Both tasted great though, with a generous slab of French salted butter!

I had one of the pan poachers things but I manage to loose the little pods. God knows how start with 4 now have 1. Same with tea spoons have 8 end up with 2
Hmm do you have a sandpit, playhouse, kids kitchen....

I swirl and crack straight in, no messing around with vinegar or sieving. It works fine for me even when the eggs are old but I think that’s because I do it every single day so my vortex/speedy cracking technique is pretty good!
I am sure all the different methods work but this one has the least messing around and creates the least washing up.
It’s definitely easier with fresh eggs when you’re learning.

Do the cling film thing. Put cling film into and over the edge of a cup or bowl. Crack the egg into it. Twist the cling film up to do it up, drop it in your pan.

I use Delia's method. Works every time. No vinegar it ruins the taste.

You stir the water before your it the egg in not when it’s in - that’s just for the poster who says you should never stir.

Possibly cheating... but these poached eggs were laid fresh that morning. It's the only solution for 'perfect' eggs in my opinion, as they hold together so well!

They're technically not poached though as the eggs are not directly in water - they are steamed when cooked in one of these.

The swirling does work but takes a little more practice! Supermarket eggs count as fresh, unless you bought them 2 weeks ago :)

Poachies are my best friend - you can get them on Amazon. Haven’t looked back since. Life is too short for swirling vortices and slotted spoons and paper towels and ramekins and such.

I have that pan. I had to replace my 30 year old poacher as it doesn’t work on induction. It will work on my hotplate and I will keep it for camping. My mum always had a poacher so I don’t understand the big need for being able to do one in water and vinegar. You get a much nicer looking egg with a poacher. Always put a small knob of butter or margarine in first.My bantam eggs fit perfectly and are very fresh some mornings.

Frying pan, bring water to boil, teaspoon vinegar. Turn off heat. Put egg in. Put lid on pan. Leave for 3 to 5 minutes until it's how you like it. Done.
