What's happened to cheese

That lovely golden melted layer appears to be no more.

It now all melts like the pre grated stuff where u can still see the individual slices/grates when it's melted.

I usually only really eat cathedral city stuff as other I tried just smelt and tasted like feet. But now it's joined the realms of the unmeltable.

It can't just be me who's noticed ?

Cheddar never melts well and that’s what cathedral city is. Red Leicester or double Gloucester melts a lot better.

I will have to buy some of that then. It never used to be this way though.

Guess like chocolate crisps and fizzy drinks and anything that used to taste nice its all just gone crap Hmm

I've noticed the same! What on earth is causing it? And it's not that 'cheddar doesn't melt' as I've been buying it for years and it always used to go gooey. I don't want a horrible hard top to my pasta bake with all the individual strands still visible thanks very much.

And yes red Leicester etc is v nice but sometimes you want that strong flavour from cheddar.

Cheddar cheese tastes of nothing to me these days. It’s lost it’s flavour, I suspect it’s just the supermarket ones. When I was a child cheese came from our local market, there was a big cheese stall with loads of different ones. They all had distinctive flavours. I really miss that cheese stall!

Cathedral city is terrible cheese. You need to buy decent cheese for it to taste good!

Cheddar used to melt perfectly fine, with a crispy golden top, it’s not that!!

Jarlsberg has really changed, it’s made here now and it’s definitely not the same as it was. Soapy taste.

Potato flour - most of the pre grated bags now contain potato flour. Stops it oozing.

Pilgrims choice is still okay I think for melting.

For parmesan types I have been having better luck with grana padano.

Chocolate is still good a long as you don’t buy the crap that is now made in Britain

I dont buy pre grated fir that reason but the blocks appear appear have gone the same way

Currently enjoying Cornish Cruncher (cheddar) from M&S. It's one of the few things worth buying from there

I've always bought mild cheese . Even on the rare occasion I bought something stronger to make a cheese sauce I'd still use thr mild on the top of the pasta bake.

It never used to be an issue.

I usually grate some mozzarella into my cheddar.

I've found you need 4 or 5 strength and to grate it to get the even cover and risk burning the crust to get the crispy layer of cheese.

Ahh - didn’t read the OP properly. The blocks must now have an added ingredient that prevents it melting in the same way the potato flour acts in the pre grated bags maybe? Iceland super sized blocks of mature cheddar still seem to melt nicely but I buy that for my teens, so they don’t complain about the quality! Although to be fair it’s actually a decent tasting cheddar.

I just buy cheese in Aldi...no problems with melting it at all. I got a gorgeous Specially Selected Gruyere last week which has made the most amazing grilled cheese sandwiches.
I'm about to have a baked potato for lunch with some grated over it now.

Corniche cruncher is a mature cheddar. It needs to age for a long time to get the crunchy bits.

Most supermarket cheese is shit. Can you go to a local deli place and ask them what they recommend? It often comes with free samples that way!
