Sandwiches and wraps

I’ve got a bring and share lunch coming up and I’ve been allocated sandwiches. I’m thinking of doing a platter of sandwiches and a platter of wraps. I’m thinking a meat, veg and fish option for each.
No allergies, couple of veggies (but one won’t eat sandwiches as no carbs) but no vegans.
The plan so far;
Sandwiches
Egg Salad
Roast beef with horseradish mayo and rocket
Tuna crunch (tuna with sweetcorn, peppers, red onion)

Wraps
Hummus with roasted red peppers and pickled carrot ribbons
Chicken tikka with spinach, mango chutney and mint and cucumber yoghurt dressing)
Prawns with fajita spices with shredded lettuce guacamole and salsa

Opinions please! I’m not into boring sandwiches but hoped to do a selection most people would find something they like in.

Ok, so more detail there will probably be about 25-30 of us and I do know them pretty well but obviously I don’t know every single like and dislike but have checked dietary requirements. As I said previously many of them are very ‘foodie!’
There will be about 12 of us doing food between us so should be plenty of other options, I know others are doing mini quiches, sausage & veggie rolls, crudités, breadsticks and dips (with spoons for dolloping so no double dipping!) crisps, samosas and bhajis, salads plus other contributions that I can’t think of off the top of my head! plus desserts. So I can’t imagine anyone will go hungry.
To the person worried about veggies, I will make sure to weight the sandwiches so more of the veggie ones but there is only one carb eating veggie so I will make sure they don’t miss out. The non carb eating veggie is on salads and said she will make sure she does things she enjoy in the mix.

Thank you, yes I’m never going to please everyone but hope most people can find something enjoyable!

I'm afraid I don't like wraps either, but I love egg sandwiches! Crusty bread and cheese instead of wraps?

If other people are doing savoury foods too, I’d just make what you like - let someone else cater for the fussy people.

I’d vary the breads a bit too. Something like:

  • Chicken mayo with crispy bacon on baguette (universally popular)
  • Avocado, roasted peppers, rocket and olive tapenade on focaccia
  • Onion bhaji, spinach and pickled carrot wrap
  • Smoked salmon, cream cheese and dill on rye (could be an open sandwich).

You could make your own focaccia, mayonnaise, bhaji, or cure your own gravadlax for extra points.

I never considered myself fussy, but this ^ menu certainly wouldn't appeal to me

I'm veggie and love hummus as a dip but find it such a dull sandwich/wrap option and I wouldn't eat an egg sandwich either. Cheese and pickle I think is far more widely enjoyed!

If they are people who like their food they will enjoy your selection, I would sub egg for cheese mainly because it's going to be warm and they might smell, it sounds delicious.

I'd do some plainer sandwiches.

I lobe egg Mayo (but won't eat cress or tomato)

Like tuna but not with sweet corn (pepper and onion lovely though!)

I'd do some ham and ham salad and cheese and cheese salad.

I'd also do mini rolls instead of wraps. Wraps can get very soggy of sat around too long!

OP - stick to your sandwiches and wraps as outlined originally. They sound amazing!!

A cheese and pickle sandwich?? - naaahhhh - boring

Wraps only get soggy if left for hours - would be fine when freshly made.

And I love the idea of pickled ribbons of carrot with huumus - lush.

And yes yes to tuna with sweetcorn/red onion/peppers - with loads of full fat mayo... go for it Grin

I love making sandwich platters for buffets and parties. It my area of expertise! Never done wraps though so you must be advanced level sandwich making.

I always do the same:

  1. Ham and grain mustard
  2. Pre Sliced cheese and chutney
  3. Smoked salmon and cream cheese with lemon and black pepper
  4. Egg mayonnaise

Sometimes I do a children's 'plain' platter ham, jam, cheese.

My tips: use Warburtons bread (blue) you can get four decent fingers out of each round. One loaf serves around 10 -12 for a buffet.

Use salted butter slightly warmed (room temp in summer) then beaten so it's spreadable. Generously spread butter improves the sandwich.
Make the night before and stack in fridge. Wet a few pieces of kitchen roll and wring thoroughly the cover over sandwiches as wrap with cling film (sometimes is skip this if I'm off early)
On the day : cut of crust and slice into fingers and arrange on platter, recover with damp kitchen roll abs cling film.

Credit Mary Berry For the The damp paper idea: keeps them super fresh and gorgeous.

The options sound good but please make sure your veggie wraps don't get contaminated by fillings from the others if they are all stacked on the same platter, esp given people will be digging in at a buffet! There is no point at all in a lovely vegetarian item with a blob of stray tuna stuck to it.

I’m well rehearsed in preventing cross contamination between veggie and non. I arrange my table very strategically!
