Please help - run out of menu ideas

I know there have been loads of threads like this but I have some very specific requirements to meet.

Problem is I have varying dietary requirements to cater for and I don't want to be cooking multiple meals every day. So I am vegetarian but both DS and DH have diagnosed issues with dairy. It doesn't work to use non-dairy alternatives as they don't like these or dairy type sauces. I'm not keen on quorn (texture is too much like meat for my liking)

I need family friendly menu ideas that meet the following requirements:

  • are vegetarian or vegan
  • do not rely on dairy as a main ingredient
  • do not include quorn or vegan processed foods

Family favourites include:
onion or beetroot tarte tatin
pasta with butternut squash and pine nuts
pasta bake
home made pizza
lentil dahl
gnocchi with olives and tomatoes and pesto
sweet potato and lentil stew
spanish omelette
sweet potato thai thing made with coconut milk

Any ideas gratefully welcomed

Also saw Nadiya make a tomato and sweet corn galette that she first spread with hummus on some tv programme the other day. Looked delicious. She used some tamarind for flavour as she softened the tomatoes, but said you could replace it with some brown sauce.

Mushroom bourguignon is also lovely, though takes a while with cooking.

Risotto but without the cheese? You'd probably need to add more salt but it would still be nice.

Falafels, hummus, taboulleu (sp!) but you know what I mean, more salad, eg leaves and/or grated carrot and onion.

What are DH and DS suggesting? Don't be the one doing all the thinking.

Make a risotto but finish it with nooch (nutritional yeast) which is very cheesy tasting once mixed in!

Ramen!

Ramen noodles
Veg broth
Bok Choi
Mushrooms
Spring onions
Eggs
Cook the noodles in the broth. Steam the bok Choi & mushrooms. Layer the noodles, greens & mushrooms in a bowl & add some broth. If you eat eggs, put a fried egg on top. Garnish with chopped spring onions, soy sauce, chili sauce.

Her cooking bacon and brie rissotto works fine without the brie and the bacon 🙄😜🤣. Just bump up the veg with at least 100g per person of mushroom and 80g per person peas.

That sounds like a bit of a headache, your current meals sound lovely though!some ideas:
-Veggie burgers - Jamie’s chickpea and sweetcorn is really easy, or carrot and kidney bean burgers - Jack Monroe’s is good for a base and you can add different spices etc.
-Veggie chilli
-Mediterranean chickpea stew/tagine (roast a load of veg with chickpeas and spices, add a can of chopped tomato, have with bulgur wheat or couscous
-spanish omelette/tortilla (we usually buy the ones you get in the deli section) with salad
-stir fry with crushed up cashews for protein
-squash and pea risotto

-sweet potato, chickpea and spinach curry

I was going to say mushroom risotto or sage and squash risotto, mine rely a bit too much on cheese at the end but I'm sure you could get round that with seasoning. You could also do a veggie paella, no dairy needed at all to make that tasty!

Beet bourgignon from the green roasting tin is lovely.

Cauliflower wings from the Bosh book are my favourite vegan thing essentially ever.

Pearl barley “risotto” no cheese (would probably be a bit gross in it to be honest) with roasted vegetables is lovely for autumn/winter.

I'm not vegan or vegetarian but this crispy butter beans recipe is one of my favourites ever. I put loads of Parmesan on mine but it's optional and still lovely without. I never have walnuts in the house so never use these either and it still tastes amazing.
