Please help - run out of menu ideas

I know there have been loads of threads like this but I have some very specific requirements to meet.

Problem is I have varying dietary requirements to cater for and I don't want to be cooking multiple meals every day. So I am vegetarian but both DS and DH have diagnosed issues with dairy. It doesn't work to use non-dairy alternatives as they don't like these or dairy type sauces. I'm not keen on quorn (texture is too much like meat for my liking)

I need family friendly menu ideas that meet the following requirements:

  • are vegetarian or vegan
  • do not rely on dairy as a main ingredient
  • do not include quorn or vegan processed foods

Family favourites include:
onion or beetroot tarte tatin
pasta with butternut squash and pine nuts
pasta bake
home made pizza
lentil dahl
gnocchi with olives and tomatoes and pesto
sweet potato and lentil stew
spanish omelette
sweet potato thai thing made with coconut milk

Any ideas gratefully welcomed

Have a look at the Riverford website (the organic veg box company). Every week they do three vegan and three vegetarian recipe boxes (they're aimed at two adults but usually generous portions so you could probably easily serve two adults and a child, maybe with a bit of extra something to bulk it out but a lot of people use them for two dinners plus a lunch or something). They also do a family size veggie meal every week (which might do two meals for you guys). Even if you don't buy the boxes you can get inspiration from the menus. They're pretty much all designed to be half hour cooks max.

They also have a really extensive vegan and vegetarian recipe selection.

I make this with chickpeas/butter beans instead of chicken. I add a stock cube as I think it needs a bit more flavour. It’s a firm favourite in this house.

I get really annoyed with the fact that so many veggie recipes rely on tinned tomatoes. It's so unimaginative.

How about an oven baked vegetable biryani? Takes 30 minutes total and is super tasty.

In pot on hob for a few minutes to toast spices:
Garlic
Ginger
Tomatoes
Curry powder
Cardamom pods
Turmeric
Bay leaf

Veggies of choice

Vegetable stock
Rice

Oven bake for 25 minutes. It's delicious and so easy

Thanks everyone - it's really helpful to get new ideas.

DS is still quite young so isn't the most adventurous of eaters in some respects (e.g. will not even try chickpeas) but I am not giving up on trying him with stuff. It's all very odd what he will and won't eat - I think I've worked out spicy/garlicly/sweet/sour is fine but he's not that keen on savoury / herby ...

This risotto is delicious, I use engevita yeast flakes instead of Parmesan. You could always take out the sage if too herby for DS:

Veggie burgers also go down well in this house. I'm not a fan of quorn either but the Tesco pea protein ones are really good or else Moving Mountains burgers.

Any Anna Jones cookbook would be a good read for you (even if it’s just to borrow from the library). They are vegetarian, but often have a vegan alternative and have recipes from all sorts of different cultures. My kids pretty much love anything I’ve cooked from her latest book ( One pot, pan, planet).
