What condiments do you ALWAYS have in
your cupboard/fridge and would feel slightly panicked not having them available?

My essentials are (in no specific order):

  • Mayonnaise
  • Dijon Mustard
  • Tomato Ketchup
  • HP sauce
  • Franks Red Hot Sauce
  • Siracha
  • Soy Sauce/Tamari
  • Liquid Smoke
  • Mushroom Ketchup
  • Worcestershire Sauce
  • Wholegrain Mustard
  • Kimchi

Not sure they qualify as condiments but I always have Fish Sauce, Gochujang, Chinese cooking wine and various vinegars (balsamic/red/white wine/cider) plus a standard veg oil and some nice Olive/Rapeseed for dressings.

Is there any fabulous condiment I'm missing that's a game changer?

Stop the press fellow condiment lovers and get your mitts on this - Banana Ketchup, I kid you not, is BLOODY LOVELY!

One thing I have which no one has mentioned yet is Patak's chilli pickle. A must for me with smoked cod or a mild curry (I like hot curries, DH likes mild, so I make mild and then the pickle spices it up a bit). Also, can recommend the Sauce Shop's Sprout Ketchup - sounds like a nightmare, tastes like heaven :)

I also have nearly everything mentioned above.

Sea salt in a mill (Maldon) - used in cooking or to season chips or roast potatoes at the table

Black Peppercorns in a pepper mill (Marks and Spencer) - used mostly at the table as a seasoning.

English mustard - on cold ham, hot roast meat, on cheese, and as an addition to cheese sauce.

French mustard - On hot roast pork, hot sausages

Wholegrain mustard - on cold meat

Mint sauce (takes about 3 weeks to get through a jar) - on roast lamb, lamb chops, lamb casserole and mixed into yoghurt to make a curry accompaniment or tzatziki.

Tomato ketchup - on chips or bacon or sausages, stirred into mayo to make seafood sauce

HP Sauce - on hot sausages

Soy Sauce (Amoy) - livens up plain rice, good addition to curries, Bolognese.

Worcester sauce, L&P - excellent in tomato juice, adds a nice flavour to shepherd's pie. Also used like Soy sauce.

Mayonnaise (Heinz Seriously Good) - used in coleslaw or with grated cheese or to make seafood sauce

Piccalilli - goes with cheese, cold meat

Mango Chutney - goes with curry

Lime Pickle - goes with curry

Horseradish, creamed - goes with hot roast beef

Cranberry sauce/jelly with whole cranberries. Ocean Spray, natch - goes with roast chicken or turkey breasts baked in stuffing.

Only the mayonnaise is in the fridge. The rest is in the cupboard.

Vinegar - has to be sarsons malt. Sprinkled over chips, lovely. Also sometimes as a salad dressing.

Salsa - with tacos.

Fish sauce - cooking ingredient only

White wine vinegar - cooking ingredient only

I'd never thought of using mint sauce for tzatziki or raita. Clever!

I think I'll steal that idea!
