show-stopping veggie food

prepare ahead if possible

I am entertaining some veggie friends who are adventurous in their tastes apart from not wanting to eat cows etc. I'd like it to be hot because we will be eating outdoors in our gazebo (I feel slightly Hyacinth Bouquetish writing that) Please hit me with all your lovely things and I will be forever grateful and might even leave stuff in my will to you -probably won't-

I'm off out for a while now so won't be replying immediately

Nasu dengaku; grilled aubergine with a miso paste spread on the surface then drizzled with honey, sesame seeds and spring onion. The aubergine goes all gooey.

Cauli florets in a baking tray, cover with olive oil, seasoning - grind red chilli, garlic, ginger, turmeric and ground coriander and add to tray - mix it up and bake for about 15 mins. Then add chickpeas (drained and rinsed) mix again and bake for another 10. Make dressing - melted butter, turmeric, ground coriander and garam masala and paste over slices of halloumi. Add halloumi and spinach leaves to pan mix it up and bake again for about 10. Take pan out and add chopped red chilli and lots of coriander leaves. Serve with naan breads.

This aubergine dahl recipe. Sounds a bit worthy, but tastes really delicious, and looks like a feast with the side dishes, chutneys and tarka topping. Everyone I've served it to has lvoed it, be they veggies, vegans or commited meat-eaters.

Mini Gujarati style filo samosas filled with chocolate, cinnamon and raisin paste. You can dust them with a little icing sugar to make them look extra special.

I served this hasselback halloumi dish last week. It was delicious, didn’t need a lot of last minute attention and looked really appetising, particularly with lots of fresh herbs. I served with salads (bulgar wheat, potato, coleslaw and a green salad) and flat breads finished on the bbq, but would be equally nice with wedges, rice or cous cous.
Otherwise red onion tarte tatin always looks good.
For less formal events I’ll often do a fig and dolchellate flat bread finished with a drizzle of honey, toasted pine nuts and scattered with rocket.

Spanakopita. I am not veggie but this is one of my favourite things (2nd being spaghetti alla Norma - perhaps I am subconsciously veggie). I use the online Little Expat Kitchen recipe and add sesame seeds to the top (brush with egg if your friends are fine with egg).

I made this for the first time yesterday and it was good if you like hot food. Dial down the chilli a bit if you don’t. My eat eating husband said it is better than a meat version.

Loads of great veggie curries and middle Eastern foods. Have a look at Ottolengi recipes (from Jerusalem as they are relatively simple) or Prashad (for curry)

On arrival cheese straws - get ready rolled puff pastry and put on a baking sheet either grease the sheet or use baking parchment. 'Butter' it with dijon mustard, sprinkle librelly with parmesan and then get a knife to score into thin strips - bake for 15 mins, take out, cool and they will snap into straws

Filo parcels as a starter, they can be filled with various things, brie with mango chutney, cream cheese and chives, mushrooms in a tomato sauce (cook the mushrooms first).

Soup - courgette and coriander

1 courgette per person, one big bunch of fresh coriander, butter or oil, veg stock cube.

slice the courgettes and sweat in the oil or butter for 10-15 mis, then add the coriander, stock cube and water, bring tot he boil and use a stick blender to make the soup - keep warm until serving with a dollop of creme fresh in the centre.

Cauliflower steak served with green veg and sauce with a red side salad (tomatoes, beetroot, orange pieces, lollo rosso lettuce and italian seasoning) so it looks nice.

for pud put bananas in foil with sugar - you can add rum, raisins, vodka, nuts and bake for 15 mins, sere with cream or ise cream.

Cheese and different breads.

I am obsessed with Sabrina Ghayour's chickpea and vegetable kofte. I serve them as suggested with wraps, garlic tahini sauce and salad, plus couscous prettied up with herbs and pomegranate seeds. I just love it. Though when I make it, I cheat and stick the chickpeas in the food processor as they take a lot of effort to mash.

Do not use parmesan cheese in anything! It isn't suitable for vegetarians as it contains animal rennet. Most supermarkets do an alternative but it isn't as strong. Most cheeses are ok but do double check.
