Mini roast

We're gaving a roast...making it a tiny bit more exciting by roasting a pepper too.

Deconstructed chicken Kiev

Chicken breasts baked in breadcrumbs. Served with garlic butter, mash, green beans.

Or roasted with garlic/lemon/rosemary and served with dauphinois potatoes.

Cook chicken with onions and mushrooms, add a tin of cream of mushroom soup or make basic white sauce. Chuck in whatever else you think might be good. Either top with pastry or serve with mashed potato. and veg of choice.

Today I threw in some cooked bacon. It was good.

Chop chicken into small pieces. Make a cheese sauce using fromage frais and blue cheese. Dry fry chicken bits in pan, strain off any fluid. Add small bacon pieces and a few frozen peas, strain off any fluid again, then add a carton of fromage frais. Simmer on low. Just before serving add a blob at double cream and warm through. Cook taggiatelli And top with sauce. Add Parmasan. Only takes about 10 mins and delicious.

So am trying the peanut butter chicken
